Anyone have a good lemon bread/cake recipe

Posted: Dec 24, 2009

Okay, just made a lemon bread.  It is moist but not as lemony as I would like.  Safeway makes a good lemony cake (or bread) thing.  So moist and lemony and I'd like to make something similar.

This recipe I just made called for 3/4 c. lemon yogurt and 1 tablepoon lemon rind.  It is moist but not a real lemon flavor (faint lemon flavor).

I tried another recipe using a lemon cake and added a box of lemon pudding.  Again, most but not real lemony.

I also tried another recipe awhile back that had 1/4 c. lemon juice, but still not a real lemony taste.

What I'm looking for is something moist that smells like lemon and tastes like lemon.  Does anyone have a recipe for a moist lemon bread or cake.  Nothing with icing (DH does not like icings).  Just looking to make something homemade and not store bought.  If not I will just keep trying different recipes I find on the internet.

Oops - should of said please and thank you - kd

Just read my post and it sounds more like a demand. HA HA HA.

If anyone has any recipes that you like would you please share.

Thank you,

Lemon poppyseed breads - sm

[ In Reply To ..]
I do the lemon cake mix and lemon pudding mix trick. I use a little dab of lemon extract and some lemon zest. Poppyseeds are optional. I think the lemon zest in it makes it just "look" like it tastes more lemony than some. That and the extract make what I think is a really lemony, not tart, but almost lemon bread.

lemon cake recipe - MTinOHIO

Here is a recipe I have used for years. No frosting, just a glaze and I could eat it hot out of the oven. It is an old one but good one for someone who LOVES lemon.

1 small box lemon jelly dissolved in 1 cup hot water. Cool but not to jello stage.

1 box lemon cake mix
3/4 cup Wesson oil (or whatever you use)
4 eggs
1-1/2 tsp lemon extract
Fold into cooled jello

Bake 350 degrees for 30-35 minutes

TOPPING

1 HEAPING cup powdered sugar (very generous cup).
4 tablespoons lemon juice (also generous)
Pierce the top of the cake right out of the oven and pour topping on and spread.

Please let me know how you like this one. I have been told by much older ladies it reminded them of something their mother or grandmother made when they were kids. I have to contain myself until it is cool enough to eat.

ENJOY!

Oooh that sounds good. - kd

I'll bet the lemon jello will make it nice and lemony like what I am looking for. Meanwhile my husband gets to be my guinea pig until I find just the right recipe. I'll bet by piercing the cake and pouring the lemon icing mixture it would be good. I'll let you know how this turns out. Probably will be a week or so before we get to the market for me to get the ingredients.

Thanks for the recipe.

It is one of the best I have ever used. Pouring the lemon juice/powdered sugar mixture on while it is still hot makes it very moist. My husband can eat a lot of it and lemon is not really his favorite. ENJOY!

Need Good Grits RecipeDec 04, 2014
Hi All- I had a really good shrimp and grits dinner a while back while on vacation. I've tried the Internet, but OMG, there are soooo many, I don't know where to begin. I figured chicken enchiladas should be pretty simple. I'd like to make them like the res ...

Has Anyone Made Lemon Meringue Pie? QuestionNov 30, 2009
I've been watching videos and reading recipes about how to make a lemon meringue pie.  Question I have is the video I saw did the lemon part first and put it into the pie shell then did the meringe part after that.  She said if you put the meringue on the pie filling while it is still hot it seels it, and the steam from the lemon cooks the meringue better.  My question....Can you make the meringue first and let it sit while you make the lemon part then put it on the pie. &nb ...

What Type Of Bread Is Okay??Aug 19, 2012
Hi all, I'm trying to be healthy lately. I've lost 18 pounds just being good.  Part of my reason for wanting to be healthy is, besides my weight, high sugar (not diabetes yet) and high cholesterol. I stopped eating white bread. I thought I had it made with whole-grain bread, since I love it, but then I read here and other places that it's not good, particularly in terms of insulin production. I also know that wheat has morphed such that I almost may as well be eating white ...

Bread So Cheap At WalmartAug 19, 2010
Please someone telling me I am just being negative. I have started worrying about low prices at Walmart, because of hearing about their trade practices. Today I noticed the usual $2.78 loaf of multigrain bread that is my favorite, is reduced permanently to $2.50. I am wondering who is "taking the hit" for that 28-cent reduction. The bakery companies? Other local grocery stores usually have that bread for $3.50 or so, but often **on sale** at $2.50. Is Walmart's reduction an effort to s ...

Bread Making QuestionsJul 17, 2014

Question About Little Bugs Flying Around BreadNov 15, 2010
Okay, last week I bought 2 sourdough rolls to make a little bowl to put some clam chowder in.  Got home and froze them in the bag they came in.  I took them out last night to thaw out and today I looked at the bag, which was still sealed shut (no holes in the bag anywhere), and I saw what looked like fruit flies (about 5 or 6 or so).  I took them out of the bag and put them on a plate and covered with saran wrap.   So here's my stupid question...are these sourdough rol ...

Type Of Rolls/bread Do You Serve At Thanksgiving?Nov 24, 2009
I prefer very soft rolls.  I like a certain type from the store that are just cheap little things but they are so good.
