Anybody got a good recipe for a pork tenderloin roast?

It's on sale at my local grocer's this week and I want to buy it, but mine always turns out too dry.  Any suggestions?

I happened to get the September 2011 issue of Cooking Light Magazine. It has an incredible number of recipes to use with pork loin and the pictures are amazing!! All recipes call for fresh ingredients, so it's right up my alley.

it if it's dry. Pork doesn't need to be cooked to death anymore to get rid of parasites. 145 and you are good to go, there should actually be just a little bit of pink in the middle.

We do tenderloin roasts a couple of ways. Mash up lots of garlic, grated onion, salt, pepper, dried oregano, and a bit of lime or orange juice into a paste, rub it on the roast and let it sit in fridge for at least an hour up to 3-4 hours, then roast per the chart below depending on weight.

You can also brine pork. Look up some recipes for that. I've found you have to adjust the salt in the receipe to your taste cause sometimes they use too much for me and it's too salty BUT you will have the moistest, tastiest pork you've ever had. Brining is the ONLY way we do pork chops anymore.

I've given up on buying rump roasts because I just can't get them right and it's too bad because rumpr roast always goes on sale. Really lean steaks always give me problems too as far as toughness. I'm pretty good with poultry and fish, but for some reason give me a lean pork roast or lean beef and I'll screw it up every time!

I just might try the brining technique for the pork roast.

Just quit ETP on Monday, so I have the time to fix a good pork roast but not the money! Try marinating the roast in soy sauce, fresh garlic, and Italian dressing with something like ginger or mustard (yo can poke a quartered garlic clove into pockets you cut in the roast) Mix the marinade, pour over roast for let sit 2 hours in fridge, 1/2 hour out of fridge. Then before you put it in the oven spread some orange marmalade or apricot jam over it. Bake in hot at 375 for 20 minutes, then bring it down in increments to about 325 and finish the roasting. Hope you love this like my family does!
