Need a good Chicken Pot Pie recipe

I would like to make individual serving sizes, and would like the fresh bread dough

on top, if you know what I am talking about.

 

I am a horrible cook and looked on a few sites, but cant find what I am looking for.

The easiest way to make one if you're "kitchen challenged" that I've found is the way my sister does it.

Buy a can of biscuits*, a couple of cans of chicken gravy, and a package of frozen peas and carrots (you can boil and dice potatoes if you want to use those, but my sister usually skips the potatoes). Dice up any fully cooked chicken into bite-sized pieces.

Defrost and totally drain the peas and carrots. Mix with the two cans of chicken gravy and the cubed fully-cooked chicken. Flour a smooth surface and roll the biscuits as flat as you can (usually to about half an inch).

Using single-sized ramekins, equally divide the chicken and gravy mixture. Top each one with one of the rolled-out biscuits and cut slits into the top for venting. Trim any excess biscuit from around the top (but leave at least 1/2 inch overhang so the top is completely covered all the way around.

Since the chicken is fully cooked, you're essentially now just cooking the biscuits and heating the insides, so cook at 350 for about 15 minutes (keep checking though to make sure not to burn the biscuit topping).

*You can also use ready-made uncooked pie crusts and simply cut into circles about an inch bigger all the way around than the size of the ramekins you're using.

I've had them and they're surprisingly good. It's the easiest "homemade" chicken pot pie recipe I've heard of.
