Lemon Sponge Pie

I offered to make a lemon sponge pie to take to Thanksgiving dinner at my sister's.  I have never made one before, but have seen several recipies on line.  I saw one that was an old Amish recipe.  The only difference really was that you add hot milk instead of cold. 

Anyone out there good at making lemon sponge pie?   I would appreciate any recipes and/or tips.   I used to always bring the mashed potatoes, but the last few holidays I brought a dessert.  My lemon cake for Easter (Martha Stewart recipe) was a real hit.

It is for a Lemon Bundt cake with a lemon cream cheese frosting that is out of this world. Let me know if you want that recipe instead of the sponge cake one.

I have tried so many lemon cakes and while they have been okay, just haven't found the right one. I'd love the recipe.

A Lemon Slice of Heaven - recipe

Cake:
4 Lemons
3 Cups all-purpoes flour
3/4 tsp. salt
1/2 tsp. baking soda
2 Cups granulated sugar
1 Cup butter (2 sticks) softened
4 Large eggs
1 tsp. vanilla extract
1 Cup buttermilk

Frosting:
2 Cups confectioners' sugar
1/2 Cup butter (1 stick), softened
4 ounces cream cheese, softened
3 Tablespoons fresh lemon juice
1/2 tsp. vanilla extract

Directions:
1. Preheat oven to 325 degrees. Grease and flour 12-cup bundt pan.

2. Cake: From lemons, grate 2 tablespoons peel and squeeze 3 tablespoons juice in small bowl (reserve rest of lemons for frosting). In another bowl, mix flour, salt, and baking soda. In a large bowl, with mixer on low speed, blend sugar and butter. On high, beat 3 minutes. Then beat in eggs 1 at a time and vanilla. Bean in flour mixture alternately with buttermilk. Fold in peel and juice from first step. Spoon into pan. Bake 60 to 70 minutes. Cool in pan for 15 minutes, then invert onto rack.

3. Frosting: In bowl, with mixer on low speed, blend sugar, butter and cream cheese. Beat in 3 Tablespoons juice from reserved lemons and vanilla. On high, beat until fluffy. Spread over cooled cake.

that called for a white cake mix, a box of lemon jello, lemon extract, whole eggs, water, and oil if I remember correctly. After it was baked and while still warm, you poked holes in it and poured a glaze of lemon juice and 10x sugar on it. A very light, fluffy delicious cake. Haven't made it in years. If anybody wants recipe I can try to find it.

Lemon Jello cake - sereneone

You might want to add some lemon zest into the glaze, maybe a couple of teaspons, if you want more lemony flavor. I've thought about it but I'm afraid I won't like it as much since it's a childhood taste memory.

Lemon Jello Cake

1 (4-serving size) box lemon jello
1 (18.25-ounce) box white cake mix
4 eggs
1-1/4 cups water
1/4 cup oil

Glaze
2 cups powdered sugar 10x
3 to 4 tablespoons FRESH lemon juice

Directions
Preheat oven to 350°F. Lightly grease 13×9-inch cake pan. Combine cake ingredients in large bowl; beat for 2 minutes. Pour batter into prepared pan. Bake at 350°F. for 45 minutes, or until cake springs back when lightly touched.

Meanwhile, place powdered sugar in a small bowl; stir in enough lemon juice to make a thin glaze consistency. While cake is hot, prick all over with toothpick or skewer. Pour glaze evenly over hot cake. Cool. Cut into squares.

It sounds wonderful. It's after midnight, and I could use a big slice of that now! I think I will make this for my family Christmas party when we all get together and each bring something. So many of us in the family just LOVE lemon!

Go to allrecipes.com. In the search box, type in lemon sponge pie. I am a good cook, but I have never tried this pie before. I loves pies so I am going to try the recipe on allrecipes.com.

Okay, just made a lemon bread.  It is moist but not as lemony as I would like.  Safeway makes a good lemony cake (or bread) thing.  So moist and lemony and I'd like to make something similar.  This recipe I just made called for 3/4 c. lemon yogurt and 1 tablepoon lemon rind.  It is moist but not a real lemon flavor (faint lemon flavor).   I tried another recipe using a lemon cake and added a box of lemon pudding.  Again, most but not real lemony.   ...
