Bread making questions

Years ago I loved to make bread and have several favorite recipes.

I'm going to give up and get a bread maker.  I see they come with recipes, but I cannot tell if you can use your own recipes in them.  Does anyone have any experience with this.  One of my favorites is a receipe for Pioneer Bread which uses some corn meal.  It is not heavy like rye, which I understand does not work well in machines.

Any advice on this would be appreciated.  I am becoming alarmed about all the chemicals and sugar showing up in places they should not be and think making my own breads would outweigh the expense of the organic safer store-bought varieties.

There is a yeast that is specifically for bread machines that doesn't need to be activated like regular yeast does.

The thing to remember with your recipe is to put the ingredients in the machine in the order that the machine instructions specify. In my bread machine, all the liquid goes in first, then the dry, with the yeast on top.

I live at 5500 feet above sea level so I also have to tweak recipes quite a lot. In regular bread making when you knead the dough, you can tell if it's too dry, too moist, etc., and it's a little trickier in the bread machine. They are set for sea level baking so if you're above sea level you might need to tweak it a bit.

I would check recipes carefully, see if you can get on any other forums about cooking/breadmaking, and ask about cutting back flour.

You may also want to try bread flour, instead of general use flour. Make sure your yeast is fresh.

It's not that difficult, once you research it a little bit. Trial and error, you'll get the hang of it.

Whether or not you can use your favorite recipe in your bread machine depends on how much flour that recipe calls for and what size the basket in your bread machine is. My bread machines are not the biggest, I think they make 1 and 1-1/2 pound loaves, so the most flour they will handle is 4 cups, 4-1/2 at the most. I have altered many recipes in it, you just have to make sure that whatever recipe you are using that all your flour adds up to the total amount that recipe calls for. I use the dough cycle and pull it out when that cycle is done, knead it back down and put it on or in whatever it will be baked in, and then put it in a warm oven (that I have turned on long enough to get warm and then turned off), and put it in there with a kitchen towel over it to rise. You also can use whole grain flours including rye. I make a whole grain bread that I use a mix of several flours including ground wheatberries, oat bran, wheat bran, wheat flour, etc. and use maybe 1/2 cup of bread flour, plus I add a little vital gluten (which is what you have to use to get a good bake out of the whole grain flours). I have also made tea rings using a sweet roll dough from by Betty C cookbook, which makes two rings from the one recipe. That recipe also will make cinnamon rolls and several other things. I don't actually bake the bread in the bread machine, but it will produce great dough under controlled conditions that I could not do without it. HTH

Anyone know how to prevent my bread from getting soggy in my lunch?  I pack a lunch in a regular insulated lunch bag, using an ice pack to keep my stuff cool.  It doesn't seem to matter what kind of sandwich I pack or whether or not I leave my sandwich unassembled, my bread is soggy when I take it out of the plastic bag.  If I don't put in a plastic bag, it gets dry.  Any suggestions? ...

I prefer very soft rolls.  I like a certain type from the store that are just cheap little things but they are so good.
