Anyone have a good recipe for pumpkin custard?

Posted: Nov 9, 2010

That way I can enjoy the taste without the guilt of pie crust.   Thanks!  By the way. . . A few weeks back someone posted a recipe for pumpkin cookies;  using the can of pumpkin and a spice cake mix.  I made those and took them to the campground for my friend's Halloween party.   They were a big hit, and so many people asked for the recipe.  Thanks so much!  So many compliments for something so easy!   I used the cream cheese frosting on them and they were great.   Tongue out

pumpkin pudding
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
one 15oz can 100% pure pumpkin *
one 12oz can evaporated nonfat milk**

* you can also use fresh pumpkin but after preparing the pumpkin, you'll have to strain most of the water out before using it for this recipe.
** coconut milk and almond milk are also good substitutes.

mix sugar, cinnamon, salt, ginger and cloves in a small bowl. beat the eggs in a large bowl. stir in the pumpkin and sugar-spice mixture. gradually stir in the milk. pour into a shallow over proof dish and bake in a preheated 350 degree oven for about 40 minutes. the center should be slightly wiggly when done. cool and enjoy at room temperature or refrigerate for later us

Thank you - Christine

Need Good Grits RecipeDec 04, 2014
Hi All- I had a really good shrimp and grits dinner a while back while on vacation. I've tried the Internet, but OMG, there are soooo many, I don't know where to begin. The recipe I had was with cheddar cheese, and the grits were ohhh, sooo, creamy. Someone gave me some grits (the real McCoy, not quick, not instant), and I'd love to use them. Anyone have any good grits recipes? I don't mean grits as a side for breakfast, I'm talking about as a meal for dinner ...

Looking For A Good Chicken Enchilada RecipeJan 29, 2012
Since watching so many episodes of Gordon Ramsey's Kitchen Nightmares we will probably never eat at another restaurant again LOL Hence, I am looking for recipes that will give us a variety of the food we love to eat. Right now I'm looking for a good chicken enchilada recipe. It's our favorite Mexican dish, actually DHs favorite is chile relleno, but that is way past my cooking skills. I figured chicken enchiladas should be pretty simple. I'd like to make them like the res ...

Anyone Have A Good Lemon Bread/cake RecipeDec 24, 2009
Okay, just made a lemon bread.  It is moist but not as lemony as I would like.  Safeway makes a good lemony cake (or bread) thing.  So moist and lemony and I'd like to make something similar.  This recipe I just made called for 3/4 c. lemon yogurt and 1 tablepoon lemon rind.  It is moist but not a real lemon flavor (faint lemon flavor).   I tried another recipe using a lemon cake and added a box of lemon pudding.  Again, most but not real lemony.   ...

Cookie Recipe?Oct 20, 2009
My grandmom and my mom used to make these cookies at Christmas that were made with baking ammonia, yup, ammonia.  Sounds awful and the stuff smells horrible too.  You had to buy it from a pharmacist, and they still do sell it.  I did ask before going on this search!   They were the most wonderful cookies.  They would just melt in your mouth.  All I recall is that they were round cookies with kind of little cracks all around the edges and you coated them wi ...

A Great RecipeJan 01, 2013
A woman I met some weeks ago gave me a recipe for crustless pumpkin pie.  I went on line and found one which varied somewhat from hers.  (She uses egg beaters and Splenda in her recipe because her husband is diabetic, etc.)   The recipe I used was perfect!   If anyone would like to try it (maybe for next season) I will gladly share it.  It is great not having to worry about making a perfect crust, which is not my strong point.   I never heard of a cru ...

Is It Rude To Ask Someone For A RecipeMay 25, 2013

Really Fast Easy RecipeJun 03, 2011
I have a really easy, quick recipe.  It's sort of Sloppy Joes, but my own version.  Brown chopped meat in a skillet.  Add seasoned salt, onion powder, a hint of garlic powder, and black pepper and stir around.  Throw in some chunks of Velveeta cheese and stir until cheese is melted all through.  Serve on bun of your choice.  You can use regular American cheese, but the Velveeta tends to melt easier and clean up in the pan easier. ...
