chicken roast?

I can't explain it, but it seems that MTs are some of the BEST cooks!! I'm looking for ideas for my chicken roast and red-skinned potatoes tonight. Can you share your tips for your best roast? TIA

P.S. Dang, I'm getting hungry already!

A little late to start it today, but put the chicken and potatoes in a crockpot with a little chicken stock in the bottom. Cook on high for 4 to 5 hours or low for 8 hours. Can also add some carrots and onions too. The meat will fall off the bones.

I usually do a whole chicken. Comes out sooo good. Can use cut up chicken too. Just watch for the small bones. The meat just falls off.

add seasonings of your choice - salt pepper, poultry seasoning, garlic, thyme, etc......

I bake mine in a Schlemmertopf - Will never be without one

I used salt, pepper, basil, garlic powder, and I throw 6 or 7 cloves of garlic inside the cavity. Then the garlic gets roasted with the chicken and I mash it into the potatoes.

If you don't have a Schlemmertopf you really should get one. Mine has a crack in the lid so going out to get another one. Bought mine in Germany. Everything is so tender. Bake for about 45 mins.

the other nite with pan-roasted rosemary new potatoes. The recipe for the chicken came from Campbells and can be found on the Food Network site. Called Lemon-Herb Roast Chicken with Pan Gravy. My kids love it.

Years ago my mother made the best pot roast ever and I know she used the cloves rather than in the jar. I have never come close to getting the taste of her's like I would like. I doubt she used as many as I have trying to replicate the taste. Wondering if I switched to the garlic in the jar, which I think might be stronger, if I could get that yummy taste again. Anyone here do garlic pot roasts? ...

I made the most amazing dish for supper. It was called a soup, but it was a bit thick to be a soup. I guess one could add some chicken broth to it if they wanted it thinner. I'd like to make homemade pizza with chicken and artichokes and fresh tomatoes. Maybe with a pesto sauce (not sure on pesto or not). Tonight I am going to try making spinach stuffed chicken breast and would like to know if this sounds right or what you would do to add or change it.
