Any ideas for skillet cooked chicken cutlets? sm

Does anyone have any ideas, suggestions, recipes for chicken cutlets cooked in a skillet?  I usually make either cacciatore or chicket cutlets with wine and Good Seasons Italian dressing, but have neither on hand.  Any thoughts would be appreciated!  Thank you.

Or lightly brown them, add some sliced leeks or chopped onion, a cup or two of frozen corn, a little light cream and flour or cornstarch just to thicken.

Or, a burrito bowl. Slice them up, lightly brown. Season with cumin, coriander, chile pepper. Add beans, rice, cheese, salsa.

Or, grill/brown, slice and put on salad.

Or, pound to 1/4" thickness. Roll up with spinach and cheese, or ham and cheese, and brown. I like to partially cook one side first and put the fillings on the cooked side and then roll up.

Or, chicken salad with mayo, grapes, walnuts, etc

Or, sliced sauted chicken sandwiches with roasted peppers and avocado, red onion, etc.

Or, brown the chicken with garlic and ginger, slice it up. Put on soba noodles with roasted red peppers, sliced cabbage, a little shoyu, rice vinegar, maybe a little peanut butter stirred in.

Couldn't make even one of those items! Even with a recipe and step by step instuctions I can't cook! I will just move in with yoh and do all the cleaning in place of eating your yummy-ness!

All your ideas sound delicious. Will have to buy some of these for next time. Right now, about all I have on hand is celery, bottled gravy, homemade tomato/pasta sauce. Plus lots of dog and cat food. LOL.

I stumbled on this site a few years ago and I've used it hundreds of times!

You click on the ingredients you have on hand in your pantry or in your fridge and it does a search for you and brings up sometimes dozens of results for dinner ideas based on the ingredients you have.

I used to look at all the random ingredients I had on my shelf and think I had nothing for dinner, but when I found this site, I was completely amazed at all the choices I actually have with just a few random things.

Maybe it will give you some ideas for your cutlets! :)

Make your own Italian Dressing - Easy

If you run out of Good Season's, just make your own. Olive oil, red vinegar, (add balsamic if desired),oregano, garlic powder, basil, salt, pepper, whatever all else you want to throw in there. Then marinate the cutlets in the mixture for at least an hour, and grill/skillet. Serve with whatever veggie you have around, or atop salad greens.

how about cut the chicken on a bias, paper thin, and stir fry. you can add an egg, sesame oil, or plain canola oil. make a sauce with soy sauce/ginger/garlic/sugar/juice. use any veggies, slice thin too. side of a rice. im hungry!

His answer, take a baby aspirin a day (I look like I have been in a fight Im so bruised) and yesterday at end of shift my leg is tight swollen and my foot.
