I made the most amazing dish for supper. It was called a soup, but it was a bit thick to be a soup. I guess one could add some chicken broth to it if they wanted it thinner. It is super easy and made in the crockpot.
Southwestern Chicken
1 can Rotel tomatoes
1 can whole kernel corn
1 can black beans, rinsed and drained (I didn't have black beans so used pinto beans)
1 8 oz. cream cheese
2 frozen skinless boneless chicken breasts - do not thaw
1 tablespoon cumin
1 teaspoon chili powder
1 teaspoon onion powder
1 envelope dry ranch dressing mix
Put all in crockpot and cook for 6 - 8 hours. When done, take 2 forks and shred chicken and stir well. Serve with cornbread.
