Would anyone like to share a recipe with me

for pumpkin cookies.  I used to have one that called for walnutes and/or chocolate chips, but cannot find it.  From what I remember they are fairly easy to make, which is a big plus because I seldom bake.  TIA!!!!

OMG - I think that is the same recipe I once had. Thanks so much. Maybe there will be the smell of pumpkin cookies in my house within the next week. I just printed off the recipe. THANKS!!!!

I too love baking and wish I had more time to do it. I remember one time having a boatload of persimmons courtesy of my dad. I had no clue what to make with them except for the standard persimmon cookies. As an experiment, I took my recipe for banana nut bread and substituted persimmon for the banana content, and added a little more cinnamon and nutmeg and used pecans instead of walnuts. It came out fabulous and even my aunt (the best baker and cook I know) called me to get the recipe...the ultimate compliment, lol! I really need to start getting ready for some holiday baking, what with the pumpkins and persimmons and everything else that will be coming my way.

Happy baking and have a cookie for me, too...They sound delicious!

Hey RLee -- it doesn't get any easier this:

1 15-oz can of pumpkin
1 spice cake mix.

You can add choco chips and/or walnuts. I like to frost mine with the whipped cream cheese frosting.

Mix together. Bake at 350 for 10 to 12 minutes on a greased cookie sheet. They come out puffy and delish! My kids love 'em and best of all, they think I really slaved over this treat for them.

Same amount of eggs/oil/water, etc? Or do you use less because of the pumpkin?

You just mix the can of pumpkin with the cake mix. No eggs, water, oil.

They turn out great every time!

They taste good, although it is a really soft dough, definitely had to use a scoop!

I may try putting some pecans in them next time. They make me think of little pumpkin bread bites than a cookie texture.

It is way too easy to walk by and grab some now. :)

I made these this morning. Soooo excellent!! I added pecans to the majority of them and liked those the most. I also did the whipped cream cheese frosting. Thanks for the simple yet delightfully delish recipe!
