The snow has started to fly here in MN and every weekend (and during the week) I sit wishing I had a crock of chili going. I usually just throw some stuff together and my family isn't too impressed, but they'll eat it. I know someone out there has a great recipe to share! Hamburger or chicken...spicy or not! My DH and I like spicy but the kids not so much. Thanks!

I use Caroll Shelby's Texas Chili mix. Very tasty, very easy. Comes in a box. sometimes I find it in the spice section, sometimes in the soup section of the grocery store. If you Google it, you will see what it looks like. Very tasty. Family loves it. I made with hamburger and beans.

My "Great Chili" recipe for crock pot - not spicy

Great Chili

1-1/2 pound ground beef (or turkey)
1-1/2 C. chopped onion
1 C. green pepper
2 cloves garlic
2 Cans kidney beans rinsed and drained
2 Cans Tomato Sauce (15 oz)
2 C. diced tomatoes (14-1/2 oz)
2 tsp. chili powder
1-2 tsp. dry mustard
3/4 tsp. basil
1/2 tsp. pepper

1. Cook beef, onion, green pepper, and garlic in skillet till brown. Drain and put in crock pot.

2. Add beans, tomato sause, diced tomatoes, chili powder, dry mustard, basil and pepper. Mix.

3. Cook low 8-10 hours, or high 4-5 hours.

Serves 6.

If you like noodles, you can add them before serving.

be careful not to overcook your beans - of they will fall apart

I always use dried beans I soaked overnight, not canned beans, but was cooking stove top. I think you are safer with a crock because the beans are less likely to get too hot for an extended period of time. Just wanted to point that out :) Also you can use chicken stock to soak dry beans overnight for better flavor.

Using stew meat costs about the same for me where I live, and adds better texture than ground meat. I love the Carroll chili kit, too

My Daddy only cooked 2 things that I remember, and that was popcorn and an amazing pot of chili, or so we always thought. If you like beans, onions, bell pepper and tomatoes in your chili, then this is not the recipe for you. He believed those things had no place in a pot of real chili. LOL

5 pounds chili meat (very coarse hamburger)
2 to 3 cloves pressed garlic (use a garlic press or smash with the broad side of a knife on the counter)
5 1-ounce bottles of Mexene Chili Powder (he only used this brand and it really made a difference. If you can't find this, Gebhardt is the closest I have found)
2 to 3 sleeves of finely crushed saltines (roll with a rolling pin to the consistency of flour)
Salt to taste

In a large heavy pot (not cast iron), brown the chili meat using a small amount of water to keep it from overbrowning before being completely done. To this, add the pressed garlic and chili powder. Stir often and cook for about 30 minutes. Add the saltine crackers which have been crushed. You will need to adjust based on the consistency, but this should make it very thick, almost a solid. Allow this to cook for 5 to 10 minutes and then taste for saltiness. You may or may not need to add salt at this point. Cook until thickened. At this point, you can eat the chili. Any leftovers should be put in a large container and refrigerated. When you heat it up for leftovers, you will need to add water to get it back to chili consistency again.

One of the wonderful leftover dishes we had with this was scrambled eggs with chili gravy. Very tasty!!

My uncle taught me how to make this chili about two years ago and oh my goodness! It has fresh chili peppers in it, so if you dont like handling peppers, this recipe is not for you. It has a little heat, but too much because the seeds and membrane are removed from the peppers. Make sure to wear gloves when working with the peppers and avoid scratching your eyes, etc.

-Hamburger (as much as you like, but I typically use about 2-3 pounds)
-Half an onion, chopped
-One to two cloves garlic, chopped or pressed
-One to two Anaheim peppers with top, seeds, and membrane removed, finely chopped
-One to two jalapeno peppers with top, seeds, and membrane removed, finely chopped
-One habenero pepper, done same as other peppers
-One-half red bell pepper, seeded and chopped
-One can tomato sauce, but may need more depending
-Two to three tablespoons chili seasoning mix or add enough to season to taste (Old El Paso works great if you can find it, but will include link for self-made mix below)
-Bean of choice (kidney beans, pintos)
-One-half to one teaspoon salt
-Cilantro if desired

Brown hamburger in a pot and drain fat, rinse in collander and let drain, then put back in pot. Add chopped onion and peppers and let soften for a few minutes. Add chili mix to taste and tomato sauce. Can add water if needed. Let simmer or can add to slow cooker at this point to finish. Cornbread or cheese and crackers goes wonderfully with this. Leave the beans out and you can have hotdog chili too!

Heres the chili mix recipe. Add a little more cumin than it calls for to pump up the flavor. Leave out the flour and sugar..its a lot better without that.
