I absolutely love fresh cucumbers but am looking for some ideas on what to fix with them instead of just eating plain sliced cucumbers...anyone with some fun and/or interesting ideas and/or recipes to share?

Can include tomatoes also, as I love them fresh grown also.

Cool As a Cucumber Salad recipe - MT55

1/2 c. mayo
1/4 c. half-n-half
1/4 c. white sugar
1/2 tsp dill weed
1/2 tsp celery seed (optional - I don't use this

3 medium cukes, peeled, & sliced thinly
diced onion to taste.

Put onion & cukes in a bowl. Mix dressing in a separate bowl & pour over cukes/onions. Make a few hours ahead of time & refrigerate.

This was a standard at family parties growing up in Detroit and I haven't had this for YEARS.

She sliced cucumber, some sweet onion thin, added fresh black pepper and cider vinegar. So good!

good on all types of bread (I use pumpernickel). They are good dipped in ranch dressing if you want to add some substance. You can blend some horseradish sauce into the cream cheese for a little bite to the flavor or in place of the watercress or radish, but it's nice to try to keep them colorful. Fresh dill or mint garnish is also a good compliment or serve with mint and lemon iced sweet tea. Yum, yum.

Also, a staple on the Persian table is Shirazi salad, which is basic tomato, onion and cucumber with olive oil and lime (sometimes parsley). It is often served with doogh, a refreshing yogurt drink made with Perrier or other carbonated water, salt and mint and/or dill. If you want to make a summer family meal out of this, serve with feta cubes, kalamata olives, radishes, fresh herbs (cilantro, basil and parsley), onion wedges, lime and fresh pita for rolling and sopping.

Come to think of it, this salad has a south-of-the-border version (cucumber salsa). Recipe follows:

2 medium cucumbers - peeled, seeded, and chopped
2 medium tomatoes, chopped
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1 (12 ounce) package tortilla chips

Lots of chopping but oh so worth it. Recruit DH to help. They inhale this stuff.

PS: I'm headed to the store for salsa ingredients. Such a good idea for a light side dish to grilled meat...not a drop of oil but lots of flavor.

I had an absolute glut of cucumbers. Neighbors, friends, and family were sick of getting them, and I was getting sick of eating them raw.

So, I had to come up with some way to deal with the cucumbers. I remember the Russian families that relocated to the USA sponsored by a local church. We shopped for them and bought them huge amounts of cucumbers. They absolutely loved cooked cucumbers. Ugh...I just couldn't fathom cooking them. That is, until my bushes of cukes from the garden.

So, I came up with this recipe, and it is delicious.

Peel and dice cukes into 1/2-inch pieces until you get 10 cups or more of them.

Dice 5-6 fist-sized onions, and sautee in olive oil until just starting to turn translucent.

Add in 1 big can diced tomatoes. Add in 1/4 cup or so minced dried garlic (Tones). Add 1/8 to 1/4 cup Italian seasoning (Tones). Add cukes. Mix well. Add 6-9 beef bouillon cubes (Tones). Simmer on stove top until cukes and onions fully cooked.

This was such a BIG hit with my family that I now regularly peel and dice and freeze cucumbers in 10-cup packages for the winter months.

Also, the cucumber stew cans very well. Just process for the longest time according to acidity.

Note that instead of canned tomatoes, you can use diced fresh tomatoes, taking the skins off if so desired.

Grilled Cheese Veggie Sandwiches

Whole wheat bread, quality (can use specialty breads)
Thinly sliced cukes
Thinly sliced avocado (can use guacomole)
Thinly sliced tomatoes
Cheese

Make your typical grilled cheese sandwich, inserting a layer of cukes, avocado, and tomato.

Denny's Restaurant used to serve this on their vegetarian menu. I went there only for that sandwich. When they stopped serving it, I stopped going.

A lot of gyro places around here serve it (they are run by Iranians). It is just a chopped cucumber, a chopped red onion, a chopped tomato with some olive oil, lime juice, and dried parsley. Sometimes mint, if you like it. I usually add cilantro (but I addl cilantro to Everything).
