Hamburger recipes needed!!

I hope you guys can help.  We raise cattle and just sent one to butcher.  It was a smaller one so we had all of it made into hamburger.  That makes 78 packages at 2 pounds a package.  That is a lot of hamburger!!  Anyway, I am needing some good recipes for using hamburger as we can only eat so much meatloaf LOL    Thanks!!!!

I make a version using tator tots (LOVE tater tots).

Tater tots
French style green beans
Ground burger
Cream of mushroom soup thinned with a little milk

I spray the bottom of a glass baking dish with Pam. Line it with tator toes, squeeze all the juice of the the can of green beans and put them on the tator tots, top that with some cooked ground beef in whatever seasonings you like, then pour a can of cream of mushroom soup over that (thinned with milk so it's not so thick. Heat until tater tots are cooked and it's nice and bubbly.

Sounds weird, but it's delicious. I haven't had it in years, but we had a pot luck and when my friend made this we all wanted the recipe.

1-1/2 pounds hamburger
1 medium onion, chopped small
4 carrots, chopped fine
3 stalks of celery, chopped fine
1 can tomato soup
2 cups water
One 28-ounce can tomatoes chopped
3 cans consomme (beef)
1 tsp oregano or basil or Italian seasoning
some chopped parsley
1 bay leaf
pepper

1 box frozen chopped spinach
corkscrew noodles.

Brown the burger with the onion. Drain well. Combine burger with all the other ingredients except spinach and noodles. Bring to boil then cover and simmer for at least 3 hours.

About 1/2 hours before servicing add the frozen apinach and continue to simmer. About 20 minutes before service add noodles and simmer til they are tender.

Serve with parmesan cheese - Makes a lot

Hamburger soup, Johnny Marzetti (spicy), salisbury steak, halupkies-(hamburger/rice mix rolled in cabbage leaves could be called cabbage rolls or other names), stuffed peppers,hamburger pie, swedish meatballs, Greek Moussaka-uses eggplant too),stuffed Manicotti, for just a few ideas.

I also make lots of spaghetti sauce and freeze it. Email me if you want any recipes. I will gladly share.

Brown the meat with chopped onions and a small can of mushroom stems and pieces chopped, drain. Add 1 can of cream of mushroom soup, undiluted and a dollop of sour cream, cook till heated through. Done. Serve with rice, mashed potatoes, noodles, etc. Tastes, great, is cheap, easy and quick....

just like pizza without a crust. Pat 2 pounds of hamburger into the bottom of a 9x13 glass baking dish, bake at 350 for about 20-30 minutes or until browned, then drain grease. It will have shrunk a bit. Layer on toppings with whatever you wish, then top with cheese and broil for 5-10 mins (watch carefully). Great for those with gluten-free diets or low-carb diets.

If you like cornbread... you will love this one - yummo

Cornbread Casserole

1 lb ground beef
1 small onion, chopped
1 pkg (8.5 oz) corn bread muffin mix
3/4 tsp salt
1/2 tsp baking soda
1 can cream corn
1 c. milk
1/4 c. veggie oil
2 eggs beaten
3 c. shredded cheddar

Cook beef and onion over medium heat.

In small bowl, combine cornbread mix, salt, baking soad, corn, milk, oil and eggs.

Pour 1/2 cornbread mixture in greased 13x9 pan, layer with 1/2 cheese and all of the meat. Then, top with remaining 1/2 cheese and 1/2 cornbread mixture.

Bake uncovered at 350 for 40 to 45 minutes (till toothpick comes out clean).

Serve with lettuce, sour cream and salsa if desired... also good plain.

Brown the meat and then add some chopped up onion and cook those until they get translucent. Add garlic, salt, pepper, even some Mexican Oregano or a dash of cumin would be good. Add chopped green chili, chopped potatoes, chicken and/or beef broth and simmer until the potatoes are tender.

I don't have any measurements because I never measure this, but I'd say if you have 2 pounds of ground beef, 2 decent sized onions would work (I like a lot of onion) 2-3 cloves of garlic, and a quart of frozen green chili, but I like a lot of mild chili, too. Probably one to two good sized potatoes chunked up. You can add as much or as little broth as you want to make it either more of a stew or a soup.
