Need salsa recipes

I love, love, love salsa and had wicked good stuff over the holiday made by a friend from Texas.  Does anyone have any salsa recipes they would like to share, nothing crazy with fruits or even beans (blech!), but just basic tomato, onion, cilanto (Love cilantro!!!), garlic, jalapeno variety.  Oh yeah, and the hotter, the better.

Also, any ideas on what I can eat it with besides corn chips or eggs?  I eat salsa and eggs every morning at breakfast, but trying to avoid the carbs and calories with corn chips.

Here's one I made up and I love it. Put fresh tomatoes into your chopper and grind them up. Add some fresh lime juice, a little garlic powder, a little salt. If you like it hot, chop a fresh jalapeno and add that, or add cayenne pepper.

Chop up like 8-10 roma tomatoes (I bought a Vidalia Chop Wizard from Walgreens and it cuts them all in perfectly even squares... also chop onion and peppers in it with smaller size squares)
1 medium size Vidalia Onion
2-3 jalepeno peppers
chop a bunch of fresh cilantro in there
1-2 tsp ground coumin
fresh lime juice

I dont have exact measurements on everything because I just do it to look, but I like fresh salsa and this really does taste amazing.

Salsa is always cooked in some fashion and pico de gallo is always fresh. I use basically the same recipe you have listed for pico de gallo, except I use green chili instead of jalapenos because I like the green chili flavor better and I also use a little bit of salt and a splash of lime juice and not a lot of cilantro.

For a more traditional salsa, try using a can (or more depending on your proportions) of diced or whole tomatoes or Rotelle tomatoes which are also very good. You might also try chopping up some bell peppers into it and using a little bit of olive oil as well - just a touch as you don't want to make it too oily. If you can find some chipotle chilis (smoked chili or jalapeno) that's really good too. Also, if you can find fire-roasted chili, that is my favorite - it adds a really nice depth to the flavor. Adding a splash of lime juice will give you a nice acid touch which will help bring out the brightness of the rest of the flavors.

As for eating salsa, man anything goes with that. I live in New Mexico and there's not much that's not made better with either green chili or salsa. A baked chicken breast is good with salsa, a baked potato is GREAT with salsa and a little bit of cheese on it, carrot sticks, celery sticks, etc., make great dippers. Make your salsa really chunky and grill a nice steak and use the salsa as a side.

For a treat, mix salsa and cream cheese together and use that as a dip when you are in the mood for chips.

Here's a really good salsa verde recipe from Allrecipes.com:

1 pound tomatillos, husked
1/2 cup finely chopped onion
1 teaspoon minced garlic
1 serrano chile peppers, minced
2 tablespoons chopped cilantro
1 tablespoon chopped fresh oregano
1/2 teaspoon ground cumin
1 1/2 teaspoons salt, or to taste
2 cups water

Simmer all ingredients together for 15 minutes or so and then blend until smooth and then add a splash of lime juice. Yum!
