anyone have any good veggie recipes to share

The next time we go shopping have decided to go all veggie for a couple weeks, hopefully longer.  We are overweight, feeling run down, and have been having stomach problems.  We knows its what we eat because after we eat we feel it the most.  So goodbye to the meat, dairy, cheese, breads, rice, sugar, chocolate, and hello to the veggies.  Now...I make excellent salads - nothing fancy (romaine, tomato, cuke, carrots, brocoli slaw, garbanzos, and a sprinkle of sunflower seeds), but they taste sooo good.  I also know how to steam veggies and we will have steamed cabbage, bok choy, brussel sprouts, and brocoli, and cauliflower.  Does anyone have any good recipes or ways to fix veggies to have a bit of variety.  Any suggestions will be most welcome.

There are a lot of really good Indian foods that are vegetarian. For them to taste good, they do need some kick, but you can easily control the degree of heat. Some are complicated, but I make a couple that are really easy...one an egg curry and the other a cauliflower dish, and neither requires a slew of ingredients. If you're interested let me know, I would go ahead and write it here, but, it being late and me being lazy, don't want to write it if you already know you don't like spicy foods.

Whenever you feel motivated to share I'd love the recipe. I love Thai food, had a chicken curry once when I was in England that I absolutely loved. I love cauliflower too.

It's very easy. Just olive oil and some seasonings.

I don't have the recipe at hand, but I think I had gotten it from the Food Network.

I love fried eggplant, eggplant parmigiana, and fried green tomatoes.

DH refuses to eat just veggies for dinner, so I don't make the above very often, but with the cost of fish nowadays, I just buy enought salmon (his favorite) and then I'll make mac and cheese for myself.

It sounds similar to mine, but instead of oiive oil, I used butter (recipe called for ghee). There was so much butter, i tossed in some rice.

But I love to grill..... I also grill veggies, you can purchase the aluminum foil throw away grill trays or a permanent one. Veggies love to fall through the grill unless you control them, LOL. I do various types of squash, zuccini, small red potatoes,Chinese pea pods, corn-on-the-cob cut into small pieces and red onions cut into wedges. I marinade them in low-cal Italian dressing. My DIL who hates veggies and won't eat them actually ate them and loved them.

You can grill all kinds of fruit and most of it ends up awfully tasty. We have grilled pineapple, apples, bananas (I don't like bananas, but my husband said they were good) and I actually liked oranges and watermelon, but I don't think that is for everyone. Ooh-- and strawberries are very good, too!
