Does anyone have any suggestions or good recipes for meals that can be made ahead of time or crockpot meals.  I'm not new to working from home with my 3 kids, but I am starting a new job where I won't have flex shift.  School is starting back all at the same time, so I want to make a smooth transition.  I will have a "practice" week their first week of school before I start, but  then after that, I'm hoping to be able to get some meal ideas.  I won't be able to cook during the evening.  Ideally, they can do their homework and when their dad gets home, he can serve from the crockpot or just heat up a nice home-cooked dinner I premade.  Is it better to freeze several meals in advance or cook dinner in the morning and put it away?  I figured the best place to ask would be fellow MTs ;-).

Crockpot chicken. - VTMT

This crockpot dish was always loved by my sons and is very easy.

Skinless chicken parts.
One jar of your favorite spagetti sauce.
Cook on low for six hours.
Serve over spagetti or rice.
That's it.

Other options are to add onions, peppers and mushrooms. I sometimes also throw in some Italian sausage.

Chicken is my favorite thing to cook in the Crockpot.

corned beef, cabbage and whole taters, maybe carrots and onions cooked on low starting in the morning, ready for dinner.

Probably my favorite food EVER and I've never thought to do it in the crock pot. And I happen to have one in the freezer right now! :)

tomorrow nite. Just found the flavor packet in the grocery store. You could cook them and have hubby throw them on the grill or under the broiler if you want that smoky grilled taste. I love crock pot stew, as well, and there is a crock pot flavor packet for that, too, as well as a crock pot flavor packet for pulled pork (yum!!)

I'm by myself but I like to make things in the crockpot or make casseroles and then freeze in smaller portions to take for lunch or toss in the microwave when I don't feel like cooking. The other suggestions were good but it really depends on your family's likes and dislikes. Crock pot stew is really good, as are beans and rice. I make a noodle casserole in the oven that uses tomato sauce, cottage cheese and cream cheese that is similar to lasagne without all the work, that's ready in about 30 minutes. The Better Homes and Gardens New Cookbook is great if you don't have that one, and there are also a lot of crock pot and one dish recipe cookbooks available as well as recipes on line. If you don't have an indoor countertop grill (George Foreman, Hamilton Beach, etc.) it's a good investment, it really cuts down on meal preparation as you can cook your meat and veggies on the grill. Again, it really depends on what your family likes, the choices are pretty limitless.

I have made several recipes from Pintrest and all were super good, except one (man-pleasing chicken). I waste tons of time on Pintrest, so be careful.

Spanish style meat (sm) - Keyboard Goddess

Here's one we love.

Dissolve 1 beef buillon cube (or a tablespoon of the sauce packs, like Knorr) in about half a cup of water. Put into crockpot, add a 2-pound chuck roast and about a tablespoon of sliced jalapenos. Use salt and pepper to taste.

Let it all cook on high for about an hour, then for about 6 hours on low until fork-tender.

You can drain the meat and use it for burritos, quesadillas, flautas, taquitos, or tacos. It's really cheap, easy and versatile. If you want to make more so it extends for a couple of meals, just increase the size of the chuck roast.

What are your family routines, etc., that work for you - your kids' routine after school?

Previously I was working a flex shift and hourly, so whatever time I spent away from the computer I made it up. I am going back to production and we are tweaking a few things around here too, like their dad's schedule. I have a more strict schedule, and it's a new job. Ideally, they will work on homework and have a snack before their dad comes home. Once he comes home, then he can do dinner, any homework they needed help with, bedtime, etc.

Ok, so what I've done is put up a command center in the kitchen. Each child has a chore chart and there is a chore list of my daily chores/to do's as well. Then there's another board with recipes, meals, and then the meal clipped for the each night of that week. The daily routine is up, and a monthly calendar for appts. There is an in/out box for each of us, so they can put papers/agendas anything in there for us to sign, and I can put it back in for them when that's done. For my youngest who doesn't talk, he has a picture chore chart and he will have a picture routine to flip through. If anyone whats a picture of the command center just email, maybe it will help you. It has to help if we can just use it! lol
