Anybody have any good recipes for potatos?

Don't know what I was thinking when I bought so many (maybe I thought there was going to be a great potato famine LOL).  There is just two of us and I bought about 20 russett baking potatos and also a whole bag full.  I've made potato salad and mashed, hash browns with eggs, baked potatos, but looking for something else to do with potatos.   Anyone have any suggestions.

I love potato soup, throw some cheese, bacon and green onions on top.

How about parsely buttered potatoes?

I sometimes slice the potatoes very thin, add chopped onion, butter and garlic salt, throw in microwave until soft, stirring occasionally. Easy and good.

Also, scalloped potatoes.

Rinse off your potatoes (I usually use 4 or 5 Russets), leave skins on. Cut into bite size pieces.

Place in cold water, add 2-3 cloves of garlic and about 1 tsp of salt (completely covering the potatoes) and boil until soft.

Strain potatoes, reserving the potato stock.

Put half the potatoes back into the cooking pot, add 1 pint of heavy cream. Add seasoning to your liking (I usually like to add Lawry's seasoning salt and onion powder).

Mash the potatoes to make a smooth creamy mixture. Add the rest of the potatoes to the mixture. Then, using a ladle, add the potato water to the broth until it's the desired consistency for your liking. Keep the rest in reserve, because the soup WILL thicken as it sits, so you can just add the potato water a little at a time to get it back to where you like it.

At this point, I like to pour it into a slow cooker and simmer.

Once you have your soup prepared.. then get your steak (I like to use thin cut from the store, easier to cut). Cut the steak into bite size pieces. I like to cut when it's just slightly less than frozen. Add to a pan (I usually just use the one the potatoes cooked in) add a bit of olive oil, some salt, some steak seasoning, and 2 cloves of fresh pressed garlic (jarred garlic works too). Cook until the steak is thoroughly done. Add to the potato soup. Cover and simmer for at least 30 minutes- an hour, stirring occasionally. Letting it simmer longer is fine. Taste test, and add seasoning if you like.

Then when you serve it, grate a generous amount of cheese on top of the individual bowls of soup and mix well.

Serve with warm biscuits, fresh bread rolls, or crisp salad.

I add ham and a couple of slices or chunks of swiss cheese to my soup. The ham flavor gets into the taters and the cheese strings from the bowl to the spoon and from the spoon to my mouth! Yummy.

I also sometimes use chicken stock instead of potato stock, for a richer broth. Delish! Top it all off also with slicsed green onion or chives.

Here is an easy one! I microwave the potatoes until they are soft. Cut in half and scoop out the inside. I usually add sour cream or even better French Onion dip, sometimes bacon bits, cheddar cheese or butter, garlic salt, etc (this stuff can vary, I never seem to make it the same way twice so use your imagination). I mix this all together, spoon back into the skins, top with cheddar cheese and bake at 350 for 20 minutes or so. My 6-year-old daughter LOVES potatoes, especially baked potatoes (I tell her she is going to turn into a potato LOL), so I have to get imaginative sometimes. These are easy and go with everything! Peel potatoes, cut in chunks and boil on stovetop until almost tender. Drain water from potatoes. Coat potatoes in a mixture of flour, salt, and pepper (spices could be added if desired) Bake on a well greased cookie sheet at 350 for 15-20 minutes or until golden brown. I ate these at an Amish Restaurant in Michigan and they were so good. Crispy on the outside and creamy soft on the inside.

1 Saute onion in 1 tablespoon butter until translucent. 2 Mix all ingredients, except cornflakes and 4 tablespoons butter, together. 3 Put potato mixture into a 9x13 inch baking pan. 4 Combine cornflakes and butter, and sprinkle evenly over top of casserole. 5 Bake at 350 degrees F for 40-50 minutes or until heated and bubbly. ? 2 eggs, beaten
1/4 cup unseasoned dry bread crumbs
2 green onions with tops, chopped
2 tablespoons milk
1/4 teaspoon seasoned pepper (Lawry's)
1/2 teaspoon seasoned salt (Lawry's)
2 large potatoes, peeled, grated, and held in ice water
1 cup (4 oz) grated cheddar cheese
4 bacon slices, cooked and crumbled (I sometimes use bacon bits or the precooked bacon).

In large bowl, combine eggs, bread crumbs, onions, milk, seasoned pepper and seasoned salt. Drain potatoes and stir into egg mixture. Add 1/2 of cheddar cheese and 1/2 of bacon. Spoon mixture into lightly greased 8x8x2-inch casserole. Bake uncovered in 350 degree oven for 20 minutes. Sprinkle with remaining cheese and bacon; bake 5 minutes longer.

I love cheese and bacon and I'm going to do this one too. God only knows why I bought so many potatoes. Bought them at Christmas and I guess I must have thought I wouldn't get out for 2 months. LOL. I'm making this one tonight because I'm in the mood for bacon and cheese (and I've got the ingredients, then I'm going to make all the others too.

The potato candy looks interesting. I don't think my DH would eat it, but I may try it out. Sounds like it would taste like a truffle or something.

I just had to share that you would think something so easy and ingredients I love would not fail....nope...it didn't work. First, I forget to put the potatoes in ice water so they were brown by the time I added them. Next I didn't drain them good enough so brown water was floating on the top when I took it out of the oven. I closed my eyes to try it and see if it at least tasted decent and I have to say...never eat potatoes if they turn brown. Even after they've been baked. I couldn't taste any bacon either.

I think I might try this again but wait until the very end to grate the potatoes and also maybe I'll pour the egg over the top. And I'll add more seasoning and more bacon.

Guess my moniker fits me... I am one bad cook - LOL.

I have never had any problem with this recipe, but do follow the directions exactly the first time around, as I am no Rachel Ray myself by any means. Sorry it did not turn out for you, but hope you try it again, as it is very good when it comes out right.

I remember years back when my husband and I first had a garden. We planted everything under the sun. We had planted some purple cabbage along with green cabbage. The green cabbage did not do that well, but the purple cabbage did. I had no idea why I planted the purple cabbage and was wondering what do with it once it grew. Seeing as though we had grown everything that goes in a boiled dinner my husband talked me into using the purple cabbage in a boiled dinner. With great reservation I listened to him. Needless to say, everything had a pink to purple tint to it when the dinner was complete, purple potatoes, purple onions - yeah you get the picture. I did as you did and even tried closing my eyes to eat it. It tasted like a boiled dinner, but the purple cabbage has an entirely different taste than green cabbage. As they say people eat with their eyes. We just could not get past the fact that everything in our plates were the same color. We still laugh about that today whenever we have a boiled dinner. Just wanted to share this funny with you.

I do not have a specific recipe,but they are all pretty basic. You can use a corn beef brisket or smoked shoulder ham.

4-5 lb smoked shoulder ham or 5-6 lb corn beef brisket. Some corn beef briskets come with a seasoning packet, which I add to the water. If not, I add 15 peppercorns, 8 whole cloves, and 1 bay leaf. If you use ham do not add these seasonings.
1 large rutabaga or turnip, cut into about 3-inch pieces
1 small package of carrots, cut into about 2-inch pieces or halved lengthwise
4 medium onions
6 medium potatoes, whole
1 medium cabbage, quartered

I put the ham or corn beef in a big pot and fill about half full or a little more with water and bring to a boil; keeping pot covered. Make sure the meat is fully covered with water. Then turn down to a medium boil for about 1 to 1 1/2 hours. I then add my turnip or rutabaga and carrots and continue a light to medium boil for an additional hour. Then I add my onions, potatoes, and cabbage and cook on a slow simmer for about another hour. Just keep checking potatoes to make sure they do not overcook and turn to mush - lol.

My total cook time is about 3 1/2 hours. Just make sure there is always enough water to cover the meat and veggies. The first time I made a boiled dinner, which was many, many years ago, I overcooked my potatoes and they dissolved away. If you choose to use a corn beef brisket - do not be surprised, as it shrinks quite a bit when it cooks.

After one boiled dinner using corned beef, and having that little spice packet lying (laying??) over all the food, I figured out a way to get the flavor, but not the mess... empty the spice packet into a tea ball, you know, them metal things that hang on a string?? Hang the hook over the edge of the pot, be sure it's immersed in the water as you cook. When it's time to serve the food, dump out that little tea ball, and no messy "stuff" hanging on your veggies and such!

Potatoes contain a lot of water. I put grated potatoes into a light weight clean kitchen towel or a double layer of cheesecloth and squeeze them out before using them in recipes.

Chocolate potato candy - RLee - reminds me of a Needham

Chocolate Potato Candy

1 lg. baked potato
1/4 tsp. salt
1 tsp. vanilla
1/3 c. Hershey's cocoa
5 c. confectioners sugar

Mashed 1 potato makes about 3/4 cupful.

CHOCOLATE GLAZE
1 sq. of Hershey's baking chocolate
1/2 tsp. butter

Combine mashed potato, salt and vanilla. Gradually beat in cocoa and sugar until the mixture is stiff enough to be rolled into balls, bite size. Chill the balls.

CHOCOLATE COATING
1 c. (6 oz.) pkg. Hershey's semisweet chocolate chips
1 c. (5 3/4 oz.) pkg. Hershey's milk chocolate chips
2 tsp. shortening

Melt chocolate pieces and shortening in top of double boiler over hot, NOT
boiling water. Stir to blend well. Remove top of double boiler from heat. Cool to warm. Then use the chocolate glaze over the chocolate coating.

CHOCOLATE GLAZE
Melt the baking chocolate and butter in top of double boiler over immering
water. Cool to warm. Dip potato balls in chocolate coating. Place on waxed paper to set. Then sprinkle chocolate glaze over chocolate coating. Chill in refrigerator to set.

Actually I have another one that reminds me of the Needham candy bar, as it has coconut in it compared to this one, which I will post when I find it. The one with coconut I prefer better, but both are really good. When I first came across the recipe I was surprised to find out the filling contained potatoes.

This is my favorite over the prior recipe. This one is also much easier. When I go to northern Maine (which is potato country) I buy about 50 to 75 lbs of potatoes, as they are sooo much better than the store bought potatoes.

Needham's Maine Potato Candy Recipe

2/3 cup mashed potatoes (with no butter or salt)
2 pounds confectioners sugar
1 large package coconut

Mix all and spread onto jelly roll pan. chill. cut into cubes about 2" square.

Melt 1 large package semi sweet or dark chocolate chips with 1/3 bar baker's wax (paraffin).

Dip cubes into chocolate and set out on wax paper. Chill. Yummy enjoy!!!!!
