Holiday recipes from grandmas

I have 3 recipes I want to share that I make for the holiday.  I share these each year and people have liked them.  These are recipes that I can sit and eat the whole thing by myself. :-)

My Grandma's jello salad. - This is one of the most refreshing things to add to the menu.  It's not a holiday without it.

1 pkg large jello (I swear by black cherry, my mom swore by lemon - both are good).

1 pkg cream cheese

1 can crushed pineapple.

2 cups boiling water

Soften the cream cheese pour the jello over that and pour the 2 cups of boiling water over it and mix til jello dissolved and cream cheese ls blended (I use a wire wisk and once cream cheese is all melted I wisk it really fast to try and get out all lumps - if you have tiny little lumps that is okay too).  Pour the crushed pineaple with juice over that and mix.  Chill til ready (I make the day before).

Husband's grandma's veggie dish (if you have children who hate vegetables, gaurantee they will love this.

1 can french style green beans (all juice drained)

1 can corn (all juice drained)

1-2 cups shredded MILD cheddar cheese

About a cup of sour cream

Crushed Ritz or Townhouse crackers

melted butter

Mix the beans and corn with the sour cream and cheese.  The amounts are a guess.  I usually use 2-3 heaping spoons of sour cream.  I love it cheesy so I used about 2 cups of shredded cheese.  It should be the consistency of cottage cheese.  If it looks a little dry to you add some more sour cream and if it looks a little watery add some more cheese.  Put in baking dish and top with crushed crackers.  Drizzle top with melted butter.  Dont drench it with butter as it might turn a little oily.  I usually drizzle about 50-60%.  Bake til hot and bubbly, bout 1/2 hour.

My pumpkin muffins

1-1/2 c suigar

1-2/3 c flour

3 teaspoons pumpkin pie spice

1 tsp baking soda

1/4 tsp baking power

2 eggs

1/2 c oil

1/2 c water

1 cup pumpkin

Preheat oven to 325

Mix all dry ingredients in a bowl.  Add the wet ingreadients stir til blended. Pour muffin cups half full. Bake for 20 minutes.  Makes 2 dozen.

The first one, the Jello salad, do you use a pretty mold and then invert it onto a plate? Or do you to make it in a bowl? It makes my mouth water. My grandma used to make that, too.

The veggie dish sounds fabulous.

I have a jello mold that I bought at a tupperware party after I had just been married (32 years ago). I don't turn it onto a plate because it's just my husband and I, so we just scoop it out. My mom had always used a pretty bowl and she chilled it a whole day in advance. So, it's all your own preference.

All dishes are so good. I've got some other recipes from my husband's grandma that are fabulous and I should post. One is company casserole using burger and egg noodle (creamy comfort food for sure), and she made this wonderful dish she called Mexican Chicken Casserole (chicken, corn tortillas and a creamy sauce that has salsa in it (I think, will have to look at the recipe). I'll find the recipes and post. All her recipes say "bake until hot and bubbly". LOL I need to get a recipe from my mother in law (who I think is the best cook in the world) and she made some kind of beef dish that had cornmeal on top baked in the oven.
