Looking for dinner idea - here's what I've got

I'm looking to make something for dinner and at a loss for ideas.  I've got a zuccini from my garden and a little bit of brocoli left.  We were sauting the zuccini and brocoli in olive oil, garlic and basal (yum).

Other stuff around my house is I've got rice, a couple potatoes.  Got cans of various kinds of beans (cannoli, white, kidney, pinto, garbanzos, and black) and I've got cans of tomatoes.  I've also got some tortillas (flour and corn). 

Can anyone make anything from the miss-mesh of ingrendients I have.  I also have frozen chicken, but trying to go meatless, unless someone thinks it really needs some meat.  I don't mind making meat with it, but just don't know how to put these ingredients together into something that would taste decent. 

Last night I made baked potatoes with steamed zuccini and brocoli, so was going to go for something a little different.

Any suggestions are welcome.

I'd probably lightly saute the zucchini, broccoli, garlic, and potatoes (diced up small), and then add in a few cans of those tomatoes. I'd season it with salt, pepper, garlic powder (we love our garlic, no vampires here, LOL!), and maybe a bit of cumin as well as some crushed red pepper flakes or cayenne to give it a little heat. You could probably even drain and add in a can of black beans and that would be tasty, too.

I'd simmer it over low heat until it was thick and stew-like in consistency, then serve it over the steamed white rice.

We love veggie-type stews at our house.

Zucchini and broccoli with roast potatoes.

Black bean and tomato soup (puree them) with rice. With a side of zucchini and broccoli.

enchilada casserole thingy with the tortillas, smothered with grated cheese. Oooey, gooey, yummy.

If you do a Google search for recipe by ingredients or recipes for what you have, something like that, there are sites where you insert what you have and they offer different options.

Been a lifesaver for me at times. I'm not very creative and this gives me options I'd never have thought about.

I made Mexican roasted potatoes (BIG BIG YUM! Will be a staple from now on (recipe below). We had it with scrambled eggs and warm corn tortillas. It was delicious. Saving the brocoli and zuccini for tomorrow with chicken and rice.

Here's the mexican potatoes. Call for 8, but of course only 2 of us so only did 2 potatoes. Was so delicious I feel like I could have eaten 8 of them though. :-)

With a big skillet of Spanish rice in progress, I'm gettin' a Texas-size hankering for some beefy, cheesey stuffed bell peppers.  It never has made much sense to me to put rice over rice, so I don't want to use rice in the stuffing mix.  Does anyone know if cheese by itself can serve as the only recipe binder?  I'm not crazy about the texture eggs produce either and do not plan to use bread crumbs.  I like the middle of the peppers to be on the ...
