HELP - I cooked instant pudding by accident

Is it still safe to eat. I can't believe I did that.

Haha, sorry, I couldn't resist. I don't think it would be unsafe to eat instant pudding that was cooked. It might change the consistency of it, though. If, on the other hand, you did NOT cook pudding that was SUPPOSED to be cooked, it probably would not come out as pudding, but rather as soup.

I have made this many times and eaten the whole thing myself before it even cooled completely! I think it's much better than packaged mixes.
Chocolate Pudding
1/4 cup sugar
1/4 cup cocoa powder
2 tablespoons cornstarch
2 cups milk
2 ounces bittersweet chocolate
1 teaspoon vanilla extract
In a medium, heavy-bottomed saucepan, stir together sugar, cocoa powder, and cornstarch. Turn heat to medium high. Gradually add milk and stir constantly until pudding begins to boil and thicken, about five minutes.
Reduce heat to medium low, add bittersweet chocolate and continue heating five minutes more until pudding is completely thickened. Remove from heat. Let cool five minutes.
Add vanilla and pour into pudding cups. Eat immediately or refrigerate.

Tonight was just one of those nights. Nothing came out right. My scrambled eggs went cold by the time I ate them, so did my spinach and next thing I knew I was chewing on a piece of un-melted butter (gross) and I forgot to add the spice to my black beans and they were also cold by the time I got to eat them. Everything was a total fail eating wise. But the pudding really upset me. Silly me, I actually thought the box behind the cook and serve was also cook and serve, so didn't even look at the label. Makes me mad because I used the last of our milk. Oh well.
Thank you so much for this recipe. Going to try this instead of the boxed the next time I make pudding.

Wondering if you can use artificial sweetner and also the lactose free milk.
Most everything now and almost all gum but one flavor and brand use aspartame and it gives me severe diarrhea. I found out that lansoprazole had it in the capsules which I don't get at all. Why would you need to use an artificial sweetner in something for heartburn.

...but why would you want to use artificial sweeteners if they give you "severe diarrhea"? Doesn't make sense.
"Everything" does NOT contain artificial sweeteners. Nothing I eat contains them. If you want to avoid them, stay away from processed junk food.
In any event, I would not use artificial sweetener because the sugar is important to the texture of the pudding.

It is just aspartame I cannot tolerate. I can tolerate Splenda and saccharin though.
Thanks for your answer about the sweetener though. Glad I can use the lactose free milk too.

I was the one who posted the recipe. Someone else answered your question about the artificial sweetener and lactose-free milk.
This recipe originally appeared on Oprah's website, and the recipe said to use low-fat or skim milk. I love fat, so I used whole milk.
I have never tried using lactose-free milk or artificial sweetener, but I do agree that sugar usually has an important effect on consistency. Everyone is different, but when I'm making/eating something special, I want it to taste the best it can taste. While preparing treats, I never substitute ingredients in order to make them low-calorie or low-fat.

I don't know why I was thinking it would be unsafe to eat. Maybe because it looked really bad. LOL
I'm more awake now. Still looks bad, but I did taste it. You are right and everyone else. The texture is off, but it tastes like chocolate pudding, but it does have jelly like texture.
So going to plop some cool whip on this and will eat it. Live and learn to read the boxes and not make something when I'm tired.
I will however, make the homemade version someone posted here next time.

I ate it, tasted fine, but the texture was "gummy pudding". LOL It's a wonder what cool whip can do. :-)
So whiz it in the blender. It will taste the same, - Nothing wrong with lumps!
