I'm swearing off meat for this week

I'm going to see if it will help me lose some weight. The only thing about it is I don't want to load up on carbs to compensate.

I would suggest looking for alternate sources of protein like beans, eggs, nuts etc.

I saw a Rachel Ray 30-minute meals episode where she made grilled portobello mushroom "burgers" with roasted red peppers and smoked mozzarella that I've been wanting to try. It sounded and looked yummy! You can find the recipe on the Food Network website. If you try it let us know how it turns out!

Also with the portobello mushroom caps, you could grill them and stuff with veggies and cheese, that would be good too. Ooooo, I'm getting hungry!

It was adapted from that Rachel Ray episode you mentioned. I am not a big fan of smoked cheese, so I use pepper jack instead. And add lots of grilled onions.

We love these at my house, although they are somewhat pricey. Very quick and easy. I don't put them on a roll, generally, but heap tomatoes and avocados on top and eat with a knife and fork. Yum.

I like to get a block of firm tofu, drain it, slice it, bread it and fry it in a pan w/a small amount of oil 'til crispy, pour tomato sauce on top and sprinkle with mozzarella cheese. If you cover it for a few minutes, the cheese melts and you have tofu parmigiana. Even healthier if you serve with the high-protein Barilla pasta and salad.

My mom is Japanese, so we regularly had tofu (love the stuff!), but her specialty was actually Italian cruisine. What an interesting idea to put the 2 together. Will have to try it.

We use tofu in stirfry, miso soup, and, my favorite way is raw, cut in cubes, mixed with soy sauce, spicy sesame oil, and thinly sliced green onions. Okay, that probably sounds gross to some people, but I like it. : )

I think I got that from the Eating Well website. We also like to marinate the tofu in soy, lemon juice, ginger, garlic, green onions and oil for a few hours and then grill it in slabs and serve w/roasted veggies and brown rice. Yum.

One day I finally came to the conclusion, on my own, that possibly I was gluten sensitive, so I started shopping at an organic market. I don't care for meat much, anyway, so going all veggies seemed healthy for me, but was I ever shocked when I realized I had dropped 10 pounds! I guess it's the fats in meat, but I'm sure that not loading up on gluten-loaded foods probably helped, too. Not to mention I simply feel better so I do more.

That said, however, on the salary I now make as an MT, I cannot continue to buy gluten-free and totally organic foods, but I am going to at least try to do that once a month. I also found that when I went from 2% to whole milk I seemed to lose a little weight?? Organic whole milk in glass bottles just tastes so much better than the milk in plastic bottles.
