I would like to keep simple and my appetite is not as big as it was. I like to fix the Knorr pasta sides, simple and quick. I am trying to cut back on meat but would like to have a little something more than just the pasta. Any suggestions? ;

A steam-in-bag Italian veggie combo, zucchini, red peppers, onions, green beans OR any veggie combo you like. Also chick peas (they come in tiny cans), but rinse them to get the excess salt out. You could also try white beans (cannellini) of kidney or red beans with veggies. Tuna is great in red sauce. You can buy the Italian style tuna in olive oil (Progresso and Pastene) or just use the dark tuna in the can and add a teaspoon or two of olive oil on your own. You can also buy a ball of mozzarella cheese and cut into cubes and throw that on top. Then there is the ever popular, in the northeast anyway) red or white clam sauce. Yum.

Great minds really do think alike. That is my quick, go-to dinner. Also, when those big Portobello mushrooms are on sale, I like making 'bello burgers by cooking those up whole in the toaster oven with a marinade, sliced onions, bell peppers, and pepperjack cheese; toss on a Kaiser roll.

I never thought of using my toaster oven to roast them with the veggies ahead of time. Sounds really easy and delicious. Only difference is I would use an Italian sandwich roll.

I like to roast the portabellos and use them instead of/in place of the bun (minus stem of course). This is my favorite low-carb sandwich. My favorite filling is turkey burger or BLT or both.

Solid white tuna, pasta, broccoli, lemon juice, (lots of) garlic, red onion, olive oil, and plenty of freshly grated parmesan cheese.

Our 2nd favorite is solid white tuna, pasta, marinated artichoke hearts, black olives, (lots of) garlic, olive oil, and plenty of freshly grated parmesan cheese.

The 2nd recipe is even easier than the first because you're only cooking the pasta (no broccoli). Then I just throw everything into one bowl and mix. There are few things that cannot be made delicious with olive oil, garlic, and parmesan cheese!

Won't touch the 4Health or Taste of the Wild. So, we're done spending a fortune on dog food. We're going back to Beneful. It seems to be the only thing she likes. Thank heavens, we only bought the small bags and they are gone now. On the positive side, as long as she's not eating much, she might lose some weight.  LOL ...

Well, the very next day, DH went to get Blue Buffalo and instead came home with a 5 lb. bag of 4health ($6) and Taste of the Wild  ($12) instead (he always listens to sales people). We started her on 4health and she didn't touch it the first day unless we put in 1/2 can of wet and veggies. The second day she ate it with no problem.
