Hot tomato grits recipe

Posted: Dec 26, 2012

Tomato Grits Recipe
2 bacon slices
2 (14 oz.) cans low salt chicken broth
1/2 teaspoon salt (I omit salt if chicken broth has salt)
1 cup uncooked quick-cooking grits
2 large tomatoes, peeled and chopped (peel by scoring tomato with an x and blanching in hot boiling water -- skin will just peel off)
2 tablespoons canned chopped green chile...s
1 cup sharp shredded Cheddar cheese

1. Cook bacon... in a heavy large saucepan over medium-high heat until crisp. Remove bacon, reserving drippings in pan. Drain bacon and crumble.

2. Gradually add chicken broth and salt to hot drippings in pan; bring to a boil. Stir in grits, tomatoes, and green chiles; return to a boil, stirring often. Reduce heat, and simmer, stirring often, 15 to 20 minutes.

3. Stir in Cheddar cheese until melted. Top with chopped bacon.
Enjoy!

Sounds yummy! - Thanks...nm

Have to shovel snow now...don't know how I even made it home, with the driving conditions, dropping my keys in the snow as I was just about to unlock my car door (had to hunt around for the keys and inconvenience 3 people) (then when I got home, got out of the car - I slipped and fell in the snow).

Anyway, I really would like some hot grits now with tomato sauce.

Sounds like you need more than grits. - Dewey

don't know if I'll make some hot chocolate or what. If I had popcorn in the house, I would make popcorn, but I don't. Just grits :)

I dropped my keys once in a green monster while throwing out the trash, but I think dropping in the snow beats the dumpster... except your search was a little cleaner than mine, I hope!

Hope you warmed up and today was a better one. :-)

That's a tough call...dumpster or snow? - wheres_my_job

I had only worn thin stretchy gloves, so they got wet looking in the snow, and I was starting to get frostbite in my fingers, especially my thumb.

Oh, today, I got a hug from the janitor! It's a wife-husband team, I gave them/her a jar of macadamia nuts (she loves Hawaii), 'cause they helped me look for my keys, and then when I found them, he brushed all the snow off my car (the snow that had accumulated in the time it took to find my keys) - he came in and gave me a hug today! I can't go into details exactly WHY the hug felt so good to me, and meant so much to me - but it was a great hug! (not in a romantic way, I don't mean that).

Anyway, the frickin' snow plows are coming through, and I need to go out and shovel the bottom of the driveway.

I have to think about what's worse - dumpster or snow - my hands were freezing, but at least it wasn't a bunch of garbage. Hard call.

Just received something similar today. sm - Dewey

A friend brought some over, but no tomatoes, and breakfast sausage instead of bacon. I really like it. Will have to give your recipe a try. Thanks for posting.

Need Good Grits RecipeDec 04, 2014
Hi All- I had a really good shrimp and grits dinner a while back while on vacation. I've tried the Internet, but OMG, there are soooo many, I don't know where to begin. The recipe I had was with cheddar cheese, and the grits were ohhh, sooo, creamy. Someone gave me some grits (the real McCoy, not quick, not instant), and I'd love to use them. Anyone have any good grits recipes? I don't mean grits as a side for breakfast, I'm talking about as a meal for dinner ...

I Have A Tomato Blight!!!!!Aug 18, 2013
Any gardeners out there with advice about tomato blight??? It is moving fast and just ruining my plants. I just cut away about the third of my garden to try and stop it. I also used baking soda solution and sprayed the plants. This just stinks. I worked so hard on digging the beds this year, watering, weeding, etc., now it seems like for nothing. Just to add to my angst, I opened my camper yesterday and it was infested with termites and then my 13yo dog lost a tooth today, so I'm feel ...

Tomato Juice And Feline Odor ProblemsMay 15, 2012
I've been with my furry friend for nearly 17 years.  I cannot smell a thing, but my neighbor says the place reeks.  I recently read a detective novel by Ridley Pearson.  In it, the character who is the police pathologist recommends mopping with tomato juice to get rid of the smell of catpee.  I know this isn't where you look for this kind advice, but I wonder if it wasn't just filler commentary and might actually help.  Three years ...

Creamy GritsMay 24, 2013
Hi everyone- I am not from the South, but I love Cajun food and hubby is a great Cajun food cook. We now live in Florida and recently went to a Cajun restaurant that had cheddar cheese grits with andouille sausage and shrimp. OMG, it was fabulous. I had not had grits before, but had heard they could be "gritty." However, this dish was unbelievable, creamy, creamy. Anyway, hubby is an excellent cook but has never tried his hand at grits and gave it a good shot. The taste came out wonderful in t ...

Need A Recipe Dec 04, 2011
My in-laws are doing christmas eve brunch, and I am told to bring some type of hashbrown casserole. Any ideas?   Mom-in-law is making 2 kinds of egg casseroles, so I guess I should not put eggs in the hashbrown one.   I suppose I will check the Taste of Home website tomorrow, but if anyone has a recipe that they have already tried and know is good, that would be helpful.   Thanks in advance. ...

Cookie Recipe?Oct 20, 2009
My grandmom and my mom used to make these cookies at Christmas that were made with baking ammonia, yup, ammonia.  Sounds awful and the stuff smells horrible too.  You had to buy it from a pharmacist, and they still do sell it.  I did ask before going on this search!   They were the most wonderful cookies.  They would just melt in your mouth.  All I recall is that they were round cookies with kind of little cracks all around the edges and you coated them wi ...

A Great RecipeJan 01, 2013
A woman I met some weeks ago gave me a recipe for crustless pumpkin pie.  I went on line and found one which varied somewhat from hers.  (She uses egg beaters and Splenda in her recipe because her husband is diabetic, etc.)   The recipe I used was perfect!   If anyone would like to try it (maybe for next season) I will gladly share it.  It is great not having to worry about making a perfect crust, which is not my strong point.   I never heard of a cru ...

Is It Rude To Ask Someone For A RecipeMay 25, 2013
Last year we were sent a jar of the most delicious strawberry preserves from my BIL's girlfriend (her mother made it).  It was the most fantastic preserves I have ever had since I was a little girl and my mom made them.  I told her how much we enjoyed them and how it brought back so many warm memories of my moms homemade jam and told her to thank her mother and let her know. About a month ago I asked my BIL if he would ask his girlfriend if we could get the recipe as we are growi ...

Really Fast Easy RecipeJun 03, 2011
I have a really easy, quick recipe.  It's sort of Sloppy Joes, but my own version.  Brown chopped meat in a skillet.  Add seasoned salt, onion powder, a hint of garlic powder, and black pepper and stir around.  Throw in some chunks of Velveeta cheese and stir until cheese is melted all through.  Serve on bun of your choice.  You can use regular American cheese, but the Velveeta tends to melt easier and clean up in the pan easier. ...

Favorite Smoothie Recipe/sApr 18, 2013
We talk a lot about weight issues and nutrition here.  I have gotten myself on a pretty healthy lifestyle now, and one of my favorite things I make for a meal now is a smoothie. You don't need any fancy equipment. If you have a decent plain old blender, that will do just fine. Throw a few ice cubes into the blender (always put frozens in first, then any solids in before liquids). I then take whatever fruit I have on hand (berries, bananas, peaches) and throw some chunks of that i ...

Need Help With Recipe - Leftover Ingredients From LasagneDec 15, 2011
