Anyone have a great meatball recipe they would be willing to share?

My only exclusions are garlic and peppers (like the dry red peppers - love 'em, but they hate me!).

Other than those two ingredients, I'm game to try anything - spaghetti is getting too boring!!

I don't think I could eat a meatball without garlic powder in it. However, here's what we do with our meatballs--but I'll leave out the garlic.

I don't have amounts, because we eyeball everything and just do to our taste. Seasoned store-bought breadcrumbs, onion chopped finely, dried oregano, dried basil, dried parsley,salt,pepper, and an egg to hold them all together. THEN, instead of doing on the stove top, we put them in a broiler-type pan with a tiny bit of water on the bottom and bake them at 350-400 for probably 1/2 hour, until they look nice and crispy. You can use a regular baking dish, too. We use the broiler pan because we think it crisps them up better, and it's nice and big so we can make a big batch and freeze them.

Yes, don't handle too much - makes them tough. And when frying, be very gentle......

From a Throwdown with Bobby Flay (that he lost). We LOVE these meatballs. I suppose you could just leave out the garlic though you don't really taste it.

1 pound ground chuck
4 ounces dried bread crumbs
4 large eggs
4 ounces whole milk
6 ounces grated Romano cheese
3 ounces grated Spanish onion
2 ounces finely diced fresh garlic
2 ounces finely chopped fresh Italian parsley leaves
2 ounces finely chopped fresh basil leaves

Directions
Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.

Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.

Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!
