Hi, I'm looking for ideas to put together meals for a few different events. I'm looking

One is for a dear friend of mine that passed away this week after a long courageous battle with cancer.  She has left behind a husband and 2 teenage sons.  I'm wanting to take a meal up to them once a week or so  to help them get through this time and make sure they are eating.  I know there are other friends that will also be doing this as well.  Any ideas would be helpful.  

 

Also, a couple at our church has taken in some teenage kids every Monday night to get together for a bible study.  I'm also looking at ideas for this that I could help out maybe once or twice a month with.  Pizza I know will be a big hit but I'm looking for something more than that even.

Chicken flautas - OCD

This is my go-to dish for exactly these kinds of situations. It can be made ahead and kept in the fridge (not sure about freezing), and is easy to make in large batches. A bag of salad and can of frijoles goes well on the side and is easy to deliver with.

This is also a great way to use Thanksgiving or Christmas turkey leftovers.

INGREDIENTS:
2 cups chopped cooked chicken* (or turkey)
1 cup picante sauce or chunky salsa
2 chopped green onions (+/- to taste)
1 teaspoon cumin (+/- to taste)
12 flour tortillas
Shredded cheese - mixture of Cheddar and Jack
Cooking oil - not much, just enough to cover one tortilla at a time in a pan

*quick cooked chicken: put boneless, skinless chicken breasts (however many you need, I do 3 or 4) in a baking pan, cover with chicken broth, cover pan tightly with tin foil, bake at 425 for 20 minutes. Poached chicken ready to use for any any recipie that calls for "cooked chicken" (if you are not using leftovers)*

PREPARATION:
-- Combine chicken, salsa, onions, and cumin in large bowl. Set aside.
-- In large skillet, heat oil until hot but not spattering. Place one tortilla at a time into hot oil, just long enough to soften and get a light-brown spot or two, but not too crispy, maybe 5 seconds or so per side. Drain on paper towels. *I put one paper towel between each draining tortilla*
--- When tortillas are cool enough to handle, lay one flat, place a dollop of the chicken mixture just off-center, sprinkle a little cheese on top of the dollop, and roll up. Secure with a toothpick and place in a baking pan.
Continue with the rest of the tortillas, nestling the rolled-up flautas side-by-side in baking pan. Not too tightly, but they can be touching each other. When pan is full, sprinkle shredded cheese over top of all - and maybe a few of the green onions for decoration if you like.
..... this is where you cover and put it in the fridge or deliver it to the recipient for cooking later.....

COOKING:
--- Bake uncovered at 400 degrees for 20 minutes or until cheese on top is melty bubbly.
--- Serve immediately.

Everyone loves this. This recipe is from memory, so I hope I have remembered everything. It's one of those that I just get out the stuff and make it. If I remember anything I have left out, I will post again.

depending on how big of eaters, you can either make this recipe or half it, but either way, I still only put one package of chicken in.

4 cans of cream of chicken soup
2 cans of chicken broth
1 stick of butter
sprinkle in minced onion and black pepper
1 package of boneless skinless chicken breasts cooked and cut up (I usually just boil it until its cooked which doesn't take long)

Mix everything together in a crockpot, cook it on high until it is hot (which is usually a couple hours), then put in about 3 1/4 to 3 1/2 cups of white minute rice and let it cook for about 30 to 40 minutes stirring frequently. Once almost all of the soup is soaked up into the rice and the rice is tender, it is done. Absolutely easy and fabulous meal that pretty much everyone loves.

If you have a Rachel Ray cookbook look through that, her recipe's put out a lot of food.

A favorite of mine to bring around for people are soups (since they can be easy and usually freeze well) and enchilada casserole (instead of rolling I layer the tortillas, meat, vegi's and cheese like lasagna; you can even put it in small freezer/oven/microwave safe bowls so that it lasts for a long time and is in smaller portions).

Just wondering what everyone uses as stocking stuffers besides the usual fruits and nuts.  I read another post under the DH/SO post about the sweet gifts in a stocking so just thought we could share some tips too.  I usually just fill ours with the usual:  Fruits, nuts, chocolates, batteries to accompany gifts, candies.  My 18-yo informed me that bobby pins would make great stocking stuffers so I might add that this year! So left leg starts swelling..Go to doc, rule out DVT said my valves are bad. His answer, take a baby aspirin a day (I look like I have been in a fight Im so bruised) and yesterday at end of shift my leg is tight swollen and my foot.
