Unless you're making deviled eggs, or want to carry one in your lunch bag, you don't need the hassle of cooking it and then peeling it. If you're going to chop it up for egg salad or curried eggs, it's way easier just to poach it hard. Cooks faster and you don't have to deal with peeling them one at a time.
I also found a curried egg recipe that I love. It's super easy. Just buy a jar of Alfredo sauce (in the spaghetti sauce section), add chopped egg, and curry powder, salt, and pepper. You can also add a handful of grated cheese or even chopped olives.. It's good on toast, rice, or even mashed potatoes - the ready made ones, of course.
