Eggs

My sister works at a ranch.  She brought over a huge basket of farm fresh, free range chicken eggs.  I'd like to know if anyone has some great recipes for eggs (other than breakfast and baking...) like dinner or lunch ideas.  I'd appreciate it.

(I've already dibbied up the eggs amongst the family and still have plenty left over!)

Frittata! - Italian girl

My grandmother was from Italy, and we lived with her. She often made frittata as an after-school snack or light meal. I guess it's the Italian version of quiche, but there's no crust to it. It's also a great way to use up leftovers. She'd take whatever was on hand, leftover meats, sliced potatoes, veggies, and put them in a large frying pan. Warm everything up with a little olive oil. Thoroughly whisk eggs with a little milk or half-and-half, about 10 or so eggs for a 12-inch frying pan. Pour the eggs over and stir to combine all ingredients and then let cook on medium heat. Some people put it all under the broiler for a bit, topped with cheese. My grandmother didn't do that. She cooked it all on the stovetop. When it was cooked and solid, she flipped it onto a platter, upside down. The bottom was lovely and golden. It was sliced into wedges, and we ate it warm or room temperature. Sometimes we'd make sandwiches out of it, too. Of course, we added salt, pepper, and maybe a little garlic, depending on how the leftovers we used were seasoned. I really like this with spinach and potatoes, and fresh sliced tomatoes placed on top.

I take a package of finely shredded sharp cheddar cheese, put in a greased pan, add 2 eggs and chopped up jalopenas, cook on 350 until the top is golden, let cool just a bit, but into squares and they are sooooo good.

Egg salad - wrkn4pnuts

Egg Salad

12 peeled and chilled hard boiled eggs
1/3 cup onions
1-1/2 cup mayonnaise
1 tablespoon mustard
salt to taste
pepper to taste
4 tablespoons pickle relish (optional)

Coarsely chop the hard boiled eggs, add chopped onions, stir together. Stir in mayo and mustard (and pickle relish if desired). Add salt and pepper to taste. Chill for at least 1 hour before serving. Good as a sandwich filling.

I raise chickens, and we frequently try new recipes to use up all the eggs!

Deviled eggs! Or, use egg whites and whip up the topping for a lemon merengue pie!

Unless you're making deviled eggs, or want to carry one in your lunch bag, you don't need the hassle of cooking it and then peeling it.  If you're going to chop it up for egg salad or curried eggs, it's way easier just to poach it hard.  Cooks faster and you don't have to deal with peeling them one at a time.
