Following along with the post below, how do I make fluffy scrambled eggs?

Mine always turn out flat and dry. Any tips?

Beat with a whisk, add about a tablespoon of milk - per egg, and do not overcook

I look a little shredded cheddar in them too, but that doesn't necessarily make them fluffy.
Try Doing Them in the Microwave - Eggs Fluff up

They are turning out dry and flat - because
[ In Reply To ..]you are overcooking them. Mix them thoroughly, incorporate plenty of air by whatever means you choose, and cook them at low heat until barely set. If they look "done" in the pan, they will be overcooked by the time they are served as they will continue to cook from residual heat.
What I Do - see msg

I didn't see this mentioned here, but I keep stirring mine with a heat-proof spatula while they're in the frying pan. Eggs are easy to overcook, so use low-medium heat. They will keep cooking even as you are taking them out of the pan, so timing is key.
Adding milk to the eggs will make the eggs watery as they sit on plate. - Instead of milk, whisk in bit of butter. nm
