Recipe for vegetable soup with clear broth

Posted: Jun 18, 2015

Does anyone out there have a delish recipe for clear broth veggie soup?  I have been hungry for it.  We have recently gone almost completely gluten free, and am loving it.  It was so easy.  not a diet, a lifestyle change.  I am not suffering major cravings, except for ice cream.  Summer, ice cream, hand-in-hand.  Anyway, I would appreciate any recipes you can send my way.  Also am looking for a totally tasty salad dressing that is clear based and gluten-free.  THANKS in advance.

;

I saute onions, carrots, celery in a little oil or butter, - add chicken broth or vegetable

broth, or water if you like, cook for a bit, then add potatoes, peas, lima beans, green beans, corn, tomatoes, etc. Whatever you like. Salt and pepper to taste.

Mine is similar and I add parsley or thyme at the - end for taste.

Same as above, plus ... - GF for Years

Same as above suggestion. If you want a more meaty (umami) taste, add sauteed mushrooms, especially shiitake.

Progresso brothers are gluten-free. The veg is very good. If you want to make your own stock, there are instructions online. I just use Progresso.

For GF salad dressing, I use Newman's Own. The vinaigrette and balsamic vinaigrette are great. You can also mix olive oil and vinegar, then add whatever to it ... Italian herbs, dried onion, etc.

THANKS - Rusty

Didn't think of parsley and 'shrooms, but great ideas. I am going to make some today, and use all of your suggestions in it, and let you know. MMMM Mouth watering just thinking about it. Don't know why craving veggies soup in mid-summer, but maybe because I am watching my garden grow, and wishing I could pick it all and cook it. I am especially going to do the salad dressing when I can pick fresh, organic veggies. LOL again, thanks for all suggestions.

Just curious if you made the mushroom soup recipe I posted and that we made.  It turned out soooo good.  I did find out that hubby puts a few more doo-dads in there that aren't in the recipe.  He LOVES to cook, so he plays around a bit. He also put some mushroom powder in there, but I don't think he deviates too far from that recipe. ...

Share Pea Soup RecipesOct 13, 2014
I'd like to share my pea soup recipe, and would like other ideas as well. I don't measure things, so just use your own judgment, likes/dislikes. Use a very heavy pot like an enamel pot or dutch oven. First, I take some olive oil, heat it, then sautee up some chopped garlic, onions, celery and carrots. I remove them from the pan when they're done, add a little more olive oil, then brown up a ham steak really well. Let the bottom of the pot get brown. (You can cube the ham steak ...

How Would You Make A Bean Soup To Taste BetterJul 25, 2010
I'd like a vegetarian type bean soup.  I had a recipe that I followed but it tasted just blah to blech.  One of those I don't know whether I like it but its bordering on a "no" (if that makes sense).  I want to use swiss chard and garlic in it.  What I had originally done was cut some swiss chard from my garden, sauteed it in garlic and a little olive oil.  Then I added 2 cans of vegetarian vegteble broth, 3 cups of water, and 2 cups of canelli bean, salt and p ...
