Cracker Barrel hash brown casserole

I found a recipe for this on-line & I thought I'd ask if anyone here has made this recipe. It calls for "one can of cream of chicken soup" but it doesn't say the size of the can. I don't know if it means the small can or the large can (going by Campbell's). For the amount of potatoes in the recipe, I would think a small can would not be enough, but other similar recipes specify the smaller can - however those recipes also only call for half the amount of potatoes as the Cracker Barrel recipe.

Any ideas?

Standard small can of soup -- Goggle the recipie and it states the ingredients -- could use ANY "cream of" soup as well does not have to be chicken

Right - there a billion versions of the recipe out there & each one says something different. I've seen them for cream of chicken/celery/mushroom...even cheddar cheese soup.

Gotta love the internet!

Here is my recipe-- - sm

1 bag frozen hashbrowns
2 cans cream of chicken soup
2 cups shredded sharp cheddar cheese
1 stick butter
salt and pepper to taste.
cornflakes

Thaw hashbrowns, mix with soup, cheese and part of the melted stick of butter, salt, and pepper.

Place in casserole dish. Cover with crushed cornflakes. Pour remaining butter over top. Bake at 350 for 1 hour.

My kids absolutely love this.

that if you don't have anything nice to say, don't say anything at all? Nobody has asked you to eat it, nor have they asked your opinion on whether or not they should eat it.

Another "vegan" huh? I wonder if you just wave the vegan banner or you really practice the lifestyle, which is very, very strict.

Being vegan, BTW is not always healthy and poses dangers, especially for teens who need a full spectrum of nutrients for proper growth and development. I've heard tons of ppl stomping around waving the "vegan" banner, that really are just vegetatians. There's a difference.

Also, it's just not nice to bash other's for THEIR lifestyle choices. Just as you have made yours, live and let live.

I am a PT trainer/nutritionist, and have seen no differences in energy level, hair, skin, to say one diet is better than another. Everything in healthy portions and moderation.

Your comment reminds me of a person who is watching someone eat something that they don't like and saying something like "eewww! I can't believe your eating that! I'd barf!" Just rude.

I've always thought being vegan was very strict and wondered about the health risks. My teenage daughter and I are both vegetarian and even her doctor said to make sure she eats a small bit of cheese or yogurt everyday. Besides, that vegan cheese looks scary lol. Like you said, healthy portions and moderation.

as much as I can, but

2 cups of shredded cheddar cheese
1 stick of butter

spread out into a whole casserole is not that bad. Keep the portions small and enjoy!

Both this one & Susan's below - When you both say 1 bag, do you know the size? It seems they had a couple different brands when I looked & all were different sizes, though I guess they weren't too far off from each other.

Oh, and this one batch is planned for a gathering of people - no one is going to sit down & eat the whole pan (at least I highly doubt it) so I don't think one portion is going to have fatal consequences!

This recipe is great. I think it is better than the ones that call for 2 cans of soup. I used whatever the size of the Ore-Ida bags are. I use shredded. I know some use the potatoes instead of shredded. Of course, if you have been to Cracker Barrel, you know they use shredded.

Good luck to all who can eat just one portion:) I'm sure I would be going back for seconds.

1 can low fat cream of chicken soup
1 container low fat sour cream
1/2 stick butter
salt
chopped onion

Mix and bake at 350 for 1 hours

instead of cream of mushroom soup, use cream of chicken soup. My mother-in-law turned me on to this. If you want to add even more to it (ahem, calories), place 1 layer of Kraft singles American cheese on top as well (the prepackaged sandwich slices). Gross but great. I saw how may coffee lovers we have on this board below, and I am certainly one of them, but I just can't stand how brown my teeth turn when I drink it. Any tips to keep this from happening? I buy sweet potatoes by the box load, about 25 pounds at a time, also buy onions and oranges the same way at the farmer's market. Would anyone have any ideas about how to store the items instead of their being in the boxes like they are now, out in the kitchen?
