Corn casserole (creamy)

Went to a potluck had a great corn casserole it had regular corn, creamed corn, peppers and something for a thickener and it was just baked - no crust or anything.  Anyone have a recipe that is similar???  We loved it and I can't find one one line anywhere.

I don't do peppers though. I do like 3 cans creamed corn, 3 cans kernel corn and 2 boxes jiffy cornbread. No peppers or onions cause my kids don't like them, but they are good. Butter caserole dish thickly, pour it all in and bake till brown. Yummy:)

Just happen to be a corn casserole junky. If you are lazy like I am, there is no real need to separate the eggs. It turns out great either way. I have tried all these, and I tend to favor the first one (it is the creamiest). Sometimes I use more cheese or Mexican style whole kernal corn (with red and green opeppers).

Corn Souffle
1 can cream style corn
1 can whole kernel corn, drained
1/4 c. milk
4 eggs, separated
2 tbsp. sugar
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. melted butter
1/2 c. shredded cheese (optional)
Mix everything in bowl except egg whites. Beat egg whites until stiff peaks form. Fold into corn mixture. Pour into greased souffle pan. Bake at 350 degrees for 20 to 30 minutes or until golden brown.

Creamed Corn Casserole
2 c. cream corn
2 beaten eggs
3/4 c. cornmeal
1/2 tsp. baking powder
2/3 c. oil
2 sm. cans diced green chilies
3/4 tsp. garlic salt
Mix ingredients and put in deep dish and top with grated cheese. Cook at 350 degrees for 1 to 1 1/2 hours. To check insert knife. Ready when comes out clean.

Corn Casserole
1 can cream style corn
1 can whole kernel corn
1 lg. onion, chopped
1 lg. green pepper, chopped
1 sm. jar pimentos, chopped
2/3 c. milk
1 egg, beaten
1 c. cracker crumbs, reserve some for top
1 c. grated sharp Cheddar cheese
1/4 c. melted butter
2 tbsp. sugar
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. red pepper
Saute onion and green pepper in butter. Combine all ingredients in a casserole. Bake 30-35 minutes at 350 degrees.

Another ingredient I use is sour cream! Check out foodnetwork.com They have everything. If you like to watch the cooking shows, you can go to the network about half way through the show and scroll down the page...in the lower righthand corner it will show you the show that is on at the time, all the receipes, and you can add them to your receipe box (to set this up is very easy). I hve saved so many things over the years and am making something for a cookout tomorrow from "my receipe box".

instead of cream of mushroom soup, use cream of chicken soup.  My mother-in-law turned me on to this.  If you want to add even more to it (ahem, calories), place 1 layer of Kraft singles American cheese on top as well (the prepackaged sandwich slices).  Gross but great.  But hey, once a year, it's ok. ...

I found a recipe for this on-line & I thought I'd ask if anyone here has made this recipe.  It calls for "one can of cream of chicken soup" but it doesn't say the size of the can.  I don't know if it means the small can or the large can (going by Campbell's).  For the amount of potatoes in the recipe, I would think a small can would not be enough, but other similar recipes specify the smaller can - however those recipes also only call for half the amount of ...
