more recipies needed with no sugar sm

Cooking buffet for 11 but the Moms don't want kids high on sugar. Also, adults have nut allergies, salt restriction, dairy restriction and one on a blood thinner. So hard to have something for everyone. Plan on ham, potatoes, chicken salad, perhaps party pizza, some pastry, usual snacking and soft drinks - no soda allowed. Help me! LOL, Merry Christmas and Happy Hanukkah, Everyone.

I am planning to cook a meal to take to a couple I know who are both diabetic. The ADA website has a lot of great recipes to choose from. You might like the Splenda Holiday Spiced Tea (recipe below). I also like creamed corn and there is a recipe I found that does not use dairy or sugar(recipe below).

The meal I am taking to my friends is Shepherd's Pie without the potato on top and with a side of baked tomato pie.

Splenda Holiday Spiced Tea
Number of servings: 16
Serving Size: 1 (6 fl oz) drink

Ingredients
12 cups water, divided
6 tea bags
4 cinnamon sticks
2 teaspoons whole cloves
1 1/4 cups Splenda® No Calorie Sweetener, Granulated
1 (6 ounce) can frozen orange juice concentrate
1/4 cup fresh lemon juice
Garnish: lemon slices, orange slices, whole cloves and cinnamon sticks

Preparation

1.Bring 8 cups water to a boil. Pour over tea bags into large heat resistant bowl; cover and steep 5 minutes. Remove tea bags, squeezing gently. Stir in Splenda® Granulated Sweetener, orange juice, and lemon juice.
2.Combine 4 cups water, cinnamon sticks and cloves in a small saucepan; bring to a boil, cover, and simmer 20 minutes. Pour mixture through a wire-mesh strainer into tea mixture, discarding spices.
3.Pour into mugs and serve tea hot with lemon and orange slices, whole cloves and cinnamon sticks.

Five Ingredient Fix Creamed Corn
Ingredients
6 slices bacon
8 large cobs fresh corn, preferably white, shucked and cleaned
Kosher salt and freshly cracked black pepper
Directions
In a large skillet, (seasoned cast iron does well here) cook the bacon over medium-high heat until crisp. Turn off the heat and transfer the bacon to a paper towel lined plate. Reserve the drippings in the pan.


On a cutting board, cut the stalk ends of the corn cobs to make a flat surface; stand them up and shave the corn from the cobs with a sharp chef's knife. Return the skillet to medium-low heat, and add the corn kernels. With the back of the knife, firmly scrape the cobs over a shallow plate to extract as much liquid (milk) as possible and add it to the skillet.


Season corn lightly with salt and pepper and cook until broken down and creamy, about 30 to 45 minutes, stirring often; add water if the pan gets too dry.

Serve warm or at room temperature.


Note: Crisp bacon can be crumbled over the creamed corn when serving or reserved for another use. If you have bacon drippings on hand, use 1/4 cup for this recipe

Thanks, you are kind, will try that site. Sounds great. Also, for children, do they recommend sugar substitues? Don't know, I use it myself but parents don't allow the sugar substitutes in diet drinks. Tough to please them all, but never thought of the ADA site for the grownups. A big help!

by using Splenda (or a generic store version) in place of the sugar. My mother-in-law, rest her soul, used to make a pecan pie with a sugar substitute that actually tasted better than the sugared version. Splenda is supposed to measure cup for cup just like sugar, so I would think most desserts would be fine with Splenda.

Great recipe that I make all the time is Jello Fruit Salad.

I pkg of jello (sugar free)
1/2 cup boiling water
8 oz of cream cheese
1 small can crushed pineapple with juice
1 T. sugar or Splenda
1 tsp. vanilla
6 oz diet 7-up

Dissolve gelatin in boiling water. Put all ingredients in blender and buzz. Pour in mild and refridge until firm.

If you are using a "tupperware" brand jellow mold, you double the recipe and that is when I get creative and use two different flavors of jello. At Christmas I use lime and cherry to make red and green.

Everyone really loves this and is really surprise that I put no sugar in it. It is gret! Enjoy your holiday

I seem to have a recurring problem with my bags of sugar. It is the plain white granulated kind. I usually buy only one bag at a time and usually pour the sugar into a canister on my countertop.
