I just found a bag of russet potatoes in the back of my kitchen cupboard that I forgot I had. Was thinking I'd bake them for dinner tonight, but noticed they're not so firm anymore - kind of soft - and have roots sprouting from them. I thought I heard a long time ago that potatoes with roots aren't edible. Should I toss them, or bake them?
