What to do with lots of potatoes

I've got a huge bag of potatoes I bought on sale a week or so ago.  Have a feeling they will go bad before I have a chance to eat them all.  Anyone have any ideas what I can do with them?

You can do any number of things. My favorite is roasting them in the oven or on the grill. Ideas:

1) Roasting: Leave skin on. Cube them and place on a piece of tin foil which has been lightly greased. Season with whatever---salt, pepper, oregano, basil, whatever strikes your fancy. Then drizzle with olive oil (or other oil if you don't have olive), then mix it up a bit. Then fold the tin foil so the potatoes are covered and poke a few holes in the foil. Place in the oven or grill and roast them up, maybe 1/2 hour.

2) Make scalloped potatoes. Lots of easy recipes on the Internet.

3) Shred them up. Thinly slice onions. Make hash browns by sauteeing them in a pan with butter.

4) Place mashed potatoes on top of your favorite pot pie when the pot pie is almost all cooked, and brown the potatoes a bit before eating.

5) Instead of regular mashed potatoes, make them roasted garlic. Roast up some garlic cloves in the oven and just smash them into your regular mashed potatoes.

Leave the skin on and cut them in half and - place them (sm)

cut side down in a baking dish that has some melted margarine and parmesan cheese or other spices you like and bake for about 30 minutes or so. The cut side will get crispy and they'll be soft in the middle and you can reheat and they should freeze okay as well. Just an idea.

dish with potatoes, smoked sausage and onions fried in butter. I just slice or cube the potatoes, chop up onions, add fresh garlic, salt and pepper and fry them for a bit. Then I add cut up smoked sausage or kielbasa and add that. It is very good.

Peel and cut potatoes as you would for french fries. Place in a large sealable bowl or jar. Make a salt water and pour over and store in refrigerator. When you get ready to fry some, just be sure to pat dry with paper towels prior to dropping in hot oil. They keep a pretty good while in the refrigerator like this.

Slice potatoes very, very thin. Place on a greased cookie sheet. Spray slices with a little bit of olive oil. Bake in oven until they start getting crispy looking. It's not the same as the real McCoy, but it's pretty darn good. You can put ketchup on them if you'd like.

next time you have a bag of potatoes going going going gone....i would just boil them, clean, cut in half and drop them in boiling water until soft. done. then they are cooked. then create whatever you want. Freeze them, mash them, roast them, fry them for breafkast with onion and herbs.....

and could not believe how much everything in that store had gone up!  You would be better shopping at Wal-Mart, Dollar General, or even Target!  I was actually in shock.  I grew up shopping from Big Lots and that was the place we would save some money on buying things like cleaning supplies and paper products.  I guess that is a sign of the times.  I can "X" Big Lots of the store list I just don't step foot in anymore. :( ...
