Southern fried green beans

Thiis is something I make a lot.  I cannot give an EXACT recipe but can give the main ingredients and how to do it

About a half package of bacon cut into peices/strips and try to separate as best as possible.

1/2 onion (optional) finely diced

6-8 tbsp olive oil

1 clove garlic chopped and miniced or garlic powder.

I package froze green beans.

Saute bacon, onion and garlic in olive oil or cannola oil.  I cook the bacon until done but not "super crispsy."

Add frozen green beans to mixture and toss with a spoon.  You may want to add about a third of a cup of water.  Let it cook without adding water for about 10 minutes and add maybe on-third cup water.  Cook on medium high heat for about 25 minutes (you want the liquid absored) and serve

Growing up green beans were only cooked 1 way in my family, with ham hock or bacon and boiled (or we used pressure cooker). Think I might have had grilled green beans in later years but funny how living in one region and never hearing of southern fried green beans.

I LOVE green beans cooked this way. It's the only way - to eat em!...sm

The only difference with your recipe and the way I do mine is that I actually use the bacon grease in place of the olive oil and add a tiny bit of water and let them simmer; however, I will definitely have to try your method of using the olive oil instead.

The term of "Southern fried green beans" was something my late husband used to call them -- hence the name. Also, what I do is put about 2-3 tbsp olive oil in the bottom of the pan, then add the bacon (I actually use a small stockpot when I make these). I add my finely chopped onion and minced garlic and the bacon and saute this until the bacon is almost crispy. I then add the FROZEN green beans and toss them in the mixture and if necessary, add about one-third of a cup of water. I then cook them for about 25-30 minutes on medium heat, stirring occasionally. If there is liquid left in the bottom of the pan/skillet, then uncover until most of the moisture is absorbed.
