Coffee - help, AnaP

Got it - sipping my first cuppa cappy.  Works great, great foam, squirt of chocolate syrup, but nowhere can I find the amount of grounds to use (filling water to second line).  My first cup was ungodly weak so I tossed it.  This is better but still weaker than I liike.  How much grounds should I use?

I find that about 2 tablespoons is the right amount. You have to put it in slowly though so you don't lose a lot of it over the lip, so I use a small 1/2 tsp measuring spoon and use 4 kinda generous scoops with that (not heaped too high or I lose some over the lip onto the counter). The instructions say not to pack it in, so I take my time and go all around tapping it out of the measuring spoon starting at the center around the spindle and working my way around. Don't worry if it looks heaping full when you're done; Mr. Phylaxis found it's got some type of spring-hinge that allows the heavier top part to compress the grounds so nothing spills when you connect the 2 together.

Aren't these the best cappies EVER? I think I like them even better than Starbucks, as the foam doesn't dissipate or anything. I haven't tried adding chocolate yet but I've been using La Perruche sugar cubes (which is what my favorite little bistro told me they use with their cappuccinos) and a sprinkle of fresh ground cinnamon over the top. Also, I tried a regular latte tonight and it was really delicious, too. I think I prefer cappies just because of all of the foam fascinates my easily distracted, over-caffeinated mind, LOL!

Mine has a basket thing that sits over the water in the bottom half. I've found I have to fill the basket pretty full.

This a.m. I was out of milk and only had heavy cream. Doesn't foam At All.

I've been mixing sugar-free choco syrup in the coffee and a big spoonful of orange marmalade - good combo. When I get to the grocery store, I'll get some pumpkin pie spice mix, but I think I'll put that in the foam rather than the coffee.

Hope this link works okay...Here's the one I got. I'm going to try to find a website or youtubes today that have different recipes ("Faux"bucks, would love to imitate some of those frappies they have).

The one I got was only around $35 - silver, kinda octagonal. It makes just enough for my big mug, and if I want a second cup, I have to start from scratch. I'm out of business until I get some more milk. Heavy cream doesn't foam at all, and I tried some Coffee Mate that Kinda foams a little.

I'm almost through 2/3 of my Kimbo, and bought a can of Medaglia D'Oro at the grocery store. Hope I like it, cuz I'm not gonna keep paying the huge shipping charges from Amazon.

I caught that yesterday when I went to order my La Perruche sugar and saw that at one site the shipping cost was higher than the sugar itself. Crazy. I won't pay shipping charges like that, either.

Our local Italian deli we frequent sells Kimbo by the can ($10 per can, which is a bit pricey IMO). My husband wants me to try the Illy brand but that's even more than Kimbo and, well, at that price it's probably REALLY good and I don't want to try it, love it...and then be too tight (or broke) to buy it again, LOL!

I've heard Cafe Bustelo is a really good reasonably-priced Cuban espresso blend, really strong, so I've ordered a 4-pack of that (with a decent shipping price) and my husband found some sugar at the local Williams-Sonoma I'm going to try (begins with an M but I can't remember the name of it).

Now that I'm loving the fresh-brewed cappuccino, I'm going to try to find the best bargains to make it with. I'll keep you posted on if the Bustelo is good and about that other sugar. Thanks for the tip on the half and half; normally I'm a half and half user with my French press coffee, but have been using regular whole milk with the cappuccino machine so I appreciate the heads up!

I'm hoping my tastebuds are not discriminating enough to tell the diff between the "good" stuff and the grocery store Medaglia D'Oro. I think the shipping for 1 can of Kimbo was about $8.

I have diabetes so avoid sugar. When I told some friends about my choco syrup and orange marma, Mark said I need to get some Davini syrup. The only flavors in the stores here are hazelnut, French vanilla and raspberry, but he said they have a ton of flavors, including orange and pumpkin pie spice. I'll check out their website and see what I can find.

He also told me he prefers using evap milk, not TOO diluted, for the foam. Easy enough to store some cans for emergencies!

Think we should quit our day jobs and become baristas?

I don't know about you, but between working 2 jobs and feeling pretty much permanently adhered to my computer except for 1 day a week, it's the "little pleasures" in life, like my coffee, that I really indulge in. I just recently started a new position with a new company and so far (*fingers crossed*) really hit that proverbial jackpot and, once the bills were caught up, my husband and I used our unexpected leftover "windfall" to treat ourselves to something; mine was the cappy maker and espresso. It used to be nice new outfits or shoes but...well, working the hours we MTs usually work, it seemed like just throwing way good money to spend it on something I'll rarely (for the foreseeable future anyway) be able to enjoy so COFFEE seemed to be the logical choice, LOL!

Baristas, sure...Heck, maybe we should even open our own coffee cart offering both diabetic and regular versions of our favorite drinks (and make sure we charge a whole boatload less than Starbucks while we're at it), LOL!

Just curious to know how much coffee you are all drinking per day.  I have an espresso machine and I make 2 large lattes a day, both with about 4 shots of espresso each.  I will also have one cup of regular coffee in the late afternoon just to get my through my mind numbing job.  I'm wondering if I'm drinking too much?!!? ...

Got my Mukka and my Kimbo Italian imported coffee and... WOW. My husband helped me figure out to set up the pot and it's just beyond amazing.  The espresso is excellent.  No diss to Starbucks, but THIS is espresso.  It seriously takes 4 minutes with the 2-cup model I purchased to have the perfect cappy right in front of you.  I'm still in awe at how the espresso brews from the bottom up through the fillter into the milk, heating it all to a perfect temperature.&nb ...

I saw how may coffee lovers we have on this board below, and I am certainly one of them, but I just can't stand how brown my teeth turn when I drink it. Any tips to keep this from happening? Had company a few weeks ago and they bought a Keurig coffee maker for us along with a variety of coffe "pods". So far, I have not found a coffee we like as much as Folger's 100% Columbian medium dark roast. All the ones we tried seem either too strong too acidic. Looking for suggestions on which coffee to try.  Not sure I would have purchased one of these "gadgets" as it is pricey and the "pods" are pricey, but it is nice for that first cup in the a.m. and even a late afternoon ...

I just made the most scrumptious blueberry sour cream coffee cake. It was so moist and sweet, but not too sweet. DH told me it tasted like something we used to get in Germany. I just had a question about good coffee mugs.  Is there a maker in the US that guarantees no lead in their products?  Might sound like a silly question, but I want to know if any of you just buy certain brands or does not matter.  Thank you for sincere replies!     ...
