If anyone has purchased ground beef lately, you know the price is skyrocketing and 1 lb of ground beef doesn't go very far to feed a family of 4. I buy it fairly lean (so they claim on the package but still a lot of grease). If I'm making a meatloaf, I would normally toss a bit of rolled oats in to fill and make the ground beef go a little further.
However, tonight was taco night and as I was preparing the beef, an idea hit me. Can't really disguise oats in tacos as you can in meatloaf. Besides, haha, discovered I was out of oatmeal but I did have a box of generic Grape Nuts cereal (WalMart brand Crunchy Nut cereal). As the beef was browning, I tossed in just enough at a time to soak up the grease and soften the cereal. It looked like ground beef and the family never knew the difference.
Will be using this trick again for sure, especially with the price of beef these days. Sheesh
