Lots of Ramen Noodles Lately

Due to trying to save as much money as possible, everywhere possible, Ramen noodles have become a frequent meal in this household.  Any cheap ideas to add variety to them?  Yeah, yeah, I know they're not the healthiest meal in the world, but sometimes cheap trumps healthy.

some curry and frozen peas. Also coconut milk. I guess that's not totally cheap, BUT a thing of curry can last you a long, long time. Instead of peas, grab the frozen edamame when it's on sale.

My son-in-law taught us to use ramen noodles by draining the water, then add butter, the mix that comes with the ramen noodles, english peas, and tuna or chicken in a can, sometimes shredded cheese. It is pretty good.

"101 things to do with Ramen Noodles" (I think that's the title--anyway, it's something similar). Or just search on Ramen Noodles in books on Amazon, it should turn up, and maybe there are other similar books to give you ideas.

Great ideas, all of them. Thank you! I still think they're the best deal going at 28 cents or so a pack. The reducing the sodium thing seems helpful, as does everything else suggested. I love spices, so I would like to try curry. Will definitely check out that book.

We add an egg (or 2 or 3, etc) to it. Just crack one open and drop it in the same way you would for a fish/venison stew... yumm!

Ramen noodles recipe - OHMT

Asian Cole Slaw

1 lb cabbage
1 c sliced almonds
1 c sunflower seeds
2 pkgs beef ramen noodles

Dressing

1 cup vegetable oil
1/3 cup apple cider vinegar
1/2 cup sugar
2 packets of seasoning from the ramen noodles

Cook ramen noodles & drain. Combine dressing ingredients in a large bowl. Add the rest of the ingredients.

This makes a yummy, crunchy salad. It makes a big batch so it'll last for days. It's a good idea before serving to toss with a big spoon from the bottom to get the dressing mixed in. Hope you like it!

A neighbor of ours made this at our neighborhood picnic this summer. It was delicious. I love it and got the recipe, although I haven't made it yet.

I shop at Grocery Outlet, where, since they basically buy overstock items from other stores, you often have to do a lot of substituting!

The store had no sunflower seeds the day I was there, so I bought a packakge of PEPITAS - (roasted pumpkin seeds). These worked every bit as well as sunflower seeds, maybe even better because they are just a tad larger, and easier to pick up with a fork when eating the salad.

They had no cabbages that day, so I bought a 1-lb. bag of mixed, chopped COLESLAW veggies - which included both green and purple cabbage, as well as slivered carrots. This worked very well!

I found 1 cup of vegatable oil to be a little bit too much. Next time I will cut down the oil to more like 1/2 - 2/3 cup, and see how that goes.

Meanwhile, to sort of bolster what had been a slightly too-soggy salad, I simply stomped-on and crushed another package of beef Ramen noodles, and added the UNCOOKED, broken-up bits to the mix, and the next day the noodles were a perfect consistency... "al dente", which I prefer over cooking the noodles. So next time I will use 100% uncooked, broken-up noodles instead of cooking them.

The dressing is great... love the "sweet-n-sour" taste of the apple cider vinegar + sugar, and the beef ramen flavoring. Chilled, with just a sprinkle of black pepper on it, it makes a healthy, easy, CHEAP, great-tasting meal! Also a great dish to bring to potlucks, too.

I love them cooked according to package with a big glob of peanut butter (enough to make a thick sauce), a shot of lemon juice and Worcestershire.

My husband and daughter make it real messy and add mayo, onions, etc. Pretty much anything added to keep them from being plain...according to what you like.

Expensive empty calories, kind of defeats the purpose of - a nutritious cheap meal. nm

Well had the first cataract done today. In lots of pain today. I didn't know it would be this bad or I might have reconsidered having it done.
