This year my family is getting together the sunday after thanksgiving because its the in-laws year for the kids, so we are doing burgers, fries and bloody marys on sunday! Figured everone will be turkeyed out!

There's no substitute for potato filling made with mashed potatoes, day-old bread, onions, eggs and salt and pepper. I look forward to it all year!

PENNSYLVANIA DUTCH POTATO BREAD FILLING

5 lb. potatoes
Milk
1/2 lb. butter
Salt
Pepper
6 eggs
1 med. bunch celery
1 1/2 lb. onions
1 (15 oz.) pkg. all purpose seasoned bread stuffing
Cook and mash potatoes using 1/4 pound butter and milk as needed. Salt and pepper to taste. Beat eggs for 3 minutes then fold into mashed potatoes. In large skillet melt other 1/4 pound butter. Chop onions and celery. Saute them at medium heat until soft and slightly brown. Fold into potatoes along with bread stuffing. Place in baking dish and bake at 350 degrees until golden brown, about 45 minutes to 1 hour. Serve with gravy. Serves about 20.

Everyone tweaks it a little their own way. I don't always use the celery and sometimes my mom adds chopped green peppers. But they're all good!

I was watching a cooking program on publlic TV and found out how to make the Perfect baked potato.  I tried it, and it IS perfect.  All you do is preheat the oven for as high as it goes - I use 540.  Wash the potato and cook it for 1 hour.  Do not prick, oil, or wrap in foil!  The skin is crunchy, and the middle soft and creamy.  Great if you want to scoop out the middle for twice-baked recipes, but I like it with browned melted butter, salt, and pepper.  ...

I know it's a little early but i'm a planner.  What do you usually do at Thanksgiving?  This will be new for me as it is now just me and my 10-y/o son.  In the past he'd usually go hunting with his dad and I'd cook/bake all day.  They'd come home with any "wayward" buddies for dinner.  My parents live 4 hours away and I'm not really too keen on just sitting around staring at eachother or the TV (as what happens with any other visit). All these recipes sound great - but I can't eat them. I have to (want to) get my weight down - haven't baked anything since July, food diary, all that jazz.
