My DH is driving me up a wall.

He is supposed to be on a cardiac diet and takes Coumadin. He is a meat-and-potato man. No matter what I want to make for dinner, he balks. This has been going on for a couple years now.

He won't eat green veggies because of his Coumadin; i.e., green beans, peas, salad greens, celery, cabbage, brussel sprouts, green peppers, etc. He, all of a sudden, hates rice, brown rice and wild rice especially. He'll only eat white rice with hamburger gravy. He won't eat pasta unless it's spaghetti or macaroni with marinara sauce (with ground beef of course). He won't eat beans except yellow wax beans. No kidney beans or great northern as a side dish, but eats chili and bean soup. There's just so much you can do with barley.

He won't touch anything that say low fat on the package. Turns his nose up at yogurt.

Today, he complained he should be eating less meat. I had to walk away when he said that.  I already make fish twice a week and chicken once a week (he doesn't like chicken that much either). He won't eat tuna unless it's tuna sandwiches. Steak? Every day if I let him.  I tried cutting his meat down to 3 ounces as recommended but it's not enough for him. The only way he'll eat 3 ounces of meat is if it's filet mignon and who can afford that. His new craving is french fries (baked, not fried of course).

So, what do I feed him now? Anyone else have this problem and how did you solve it? I'm ready to take a cast iron fry pan and do you-know-what with it.

Maybe you can be "sneaking" the healthy foods he likes in. Is it beef that he likes or just steaks? Cook a roast and make a stir fry or stroganoff, and use low fat/low salt ingredients.

Unfortunately, 3 ounces of meat wouldn't cut it for me, either. FWIW, the cheaper cuts of meat are actually better for you as it's the pricey stuff that has so much fat in them, so maybe a 6 ounce piece of round steak wouldn't be much worse than a 3 ounce fillet.

I don't know how much time you have, but maybe a risotto, which isn't as complicated as Top Chef likes to make it look. Some aborio rice and your imagination makes a really filling dish and doesn't have to be fattening (one of the best I made involved a can of stewed tomatoes, a large can of tomato sauce, and a chicken breast). You can make it with leftover beef, seafood, cheese, veggies, etc.

Won't eat rice. I would love to try risotto. Looks so good. He wouldn't touch it.

I really don't give him filet mignon anymore. Only at Christmas or New Years (only 1 of those holidays).

I'm the direct opposite. I'll try anything once. Not him.

Oh, and he will not touch an egg in any way, shape or form. Hates them with a passion (I do sneak them in some dishes without him knowing), and I can't make mac and cheese if he's home because he can't stand the smell of melting cheese.

doctor told him it was fine to have anything in MODERATION now (he's 1 1/2 years out from his bypass). So about once a week I let him have something he used to eat before his bypass that he really likes or craves and then the rest of the time he's happy to eat the things he should eat even though he's still very picky about vegetables as well (he hates them too).

We used to eat a lot of salads. It's his favorite meal, but he will only eat one a month now.

He was told he could have anything in moderation but he's afraid it will screw up his INR. He had a hard time getting the INR within the limits and it still happens once in a while. Sometimes it will be 2.1, other times 3.0. He wants it at 2.5, and so the problem. It's never the same and he has to be checked every 3 weeks.

He sounds like a 3-year-old that won't try the good stuff cuz it don't look like a cheeseburger from McDonald's. I would cook healthy, and he'd either 1) eat it; 2) make his own; or 3) (my personal favorite) starve. Simple as that. I'm so tired of hearing "I don't care" everytime I ask what he wants for supper. I make what I want and if he don't like it, he goes without, or he gets something out of the fridge. When he learns how to cook, then more power to him, until then, supper is what I fix. Til he gives an opinion on what he wants for supper or learns to do it himself, we eat what I cook around here.

I get the "I don't care" every time too, but when I give suggestions, that's when it gets frustrating. I tried not suggesting, but it didn't work either. "It's edible but don't make it again" or "it's okay once in a while."

I took a poll of all his male friends and co-workers. I asked "What do you say when your wife/gf asks you what you want for supper". I got a variety of answers, all pretty much the same thing:
I don't care.
Whatever.
Whatever you're cooking.
It doesn't matter.
etc. etc. etc.

We shop for it, put it away, cook it and clean up after it, I don't think we should have to pick it all the time, too.

Seriously though, I would just cook healthier than what he has been eating a little at a time (start with 1 or 2 nights a week). He'll either eat what you cook or go hungry, it's his choice.

I worry all the time about my dad's health... sounds a lot like your hubby.
and sorry I have no words of encouragement or suggestions, I think my mom deals with the same thing, trying to get him to eat better... exercise... GO TO THE FRIGGEN DOCTOR. just doesn't happen... I swore when his first grandchild was born he woulda changed his mind. I even had me and my 2 sisters write him letters about it... it's like an addiction problem but it is really starting to piss me off! :(
