Happy St. Pat's Day!!

Going to be 80 degrees today - our average on St Pats is 49 and record high from 1966 is 72 degrees - love it when we beat the record highs but kind of wishing I had bought burgers and hot dogs for dinner instead of corned beef and cabbage - maybe we will eat it outside can't say I have ever had corned beef and cabbage outside.

Enjoy your weather for me. I am looking out the window as the snow falls--about an inch on the ground--and it does not look like it is going to stop anytime soon. Sigh. As far as eating out, how about making Reuben sandwiches? You can have the convenience of finger food AND eat outside. Win-win.

We boil up the corned beef till done, then pop it on the grill for 10 minutes to crisp it up. (We live in SW FL so this is no problem in March.) Then we slice thin, serve on rye and top it with Swiss cheese, cole slaw and Thousand Island dressing. Mmm, mmm, good.

That while we too will be having corned beef and cabbage it has nothing to do with St Pat's day. They don't eat CG&C in St. Pats day in Irelend. I read an article that somewhere once that said out of over 50 people in Ireland were asked the question of what they were going to make for St Pats day not one person said corned beef and cabbage.

I just think its funny.

Perhaps the origins of the corned beef and cabbage being "Irish" in fact started with this dish, which has been around for a lot of years (see link)? In NE, it's traditionally made around St. Paddy's Day, so perhaps the entire US adopted it as the "traditional" meal for the occasion.

I think it is an American St. Pat's Day Tradition - Kinda like green beer

... although I think they could have stopped with the CB&C. I hold a very strong opinion that the day would not be diminished by any lack of artificially green foodstuffs.

Not that I am complaining, mind you. To each his own.

The doctors and the government took choice away from these parents and basically said "sorry, your child is just going to die, no tracheotomy for him."
