stay active/move around, and avoid bad food choices and empty calories in order to prevent childhood obesity as well as trying to make proper nutrition available to kids in their school lunch programs. You like fat kids with hypertension and diabetes (I know.... it's just sooooo adorbs)? Well then, try following Chris Christie around with a calorie counter and model your diet after someone really trying to make a difference. And when you reach that goal of morbid obesity, take Rush's dieting advice and pop pills. Go figure!

Seriously, I don't understand the flack she gets for encouraging health. And yes, health can include an occasional splurge when properly planned for. Weight Watchers even allows for it for cryin' out loud.

OP insinuated that Michelle was responsible for menu, obviously an assumption and not a fact. I pointed out who crafted the menu as a fact and cited, and I inquired if OP watched Michelle eat everything on her plate since that would be the only way she would know that Michelle consumed the entire 3000 calories.

Facts are facts. You can't agree or disagree with a fact, but you can point out an incorrect assumption, especially when accompanied with a jab.

About This Recipe
"The official recipe for the second course side dish for the luncheon following the second Obama Inauguration"
Ingredients
12 ounces red potatoes, medium sized, cut into 1-inch dice with skin on
1 tablespoon prepared horseradish
1/2 tablespoon whole grain Dijon mustard
3 tablespoons butter
1/2 cup heavy cream
2 tablespoons kosher salt
1 teaspoon white pepper
1/4 cup chives
1/2 gallon water
1 cup micro greens, available in specialty markets
2 -4 tablespoons olive oil
Directions
In a large heavy-bottomed pot, place 1 Tb of salt and potatoes in 1/4 -1/2 gallon of water (or just enough to cover the potatoes. Bring to a boil over high heat.
Allow to simmer for 10-15 minutes until tender. Drain water and allow potatoes to sit in a strainer for 5 minutes to allow all water to drain.
Place potatoes, Dijon mustard, horseradish, 2 Tb of butter, heavy cream, remaining 1 Tb of salt, pepper and chives (or green part of scallions or leek) back into the same pot you used to boil the potatoes.
With a large kitchen spoon, stir and smash potatoes until mashed but still chunky, Adjust seasoning of salt and pepper to taste.
Using an ice cream scoop, portion a 3-ounce scoop onto a baking sheet oiled with olive oil. Form potatoes into a cake shape and top with remaining 1 Tb of butter, dividing equally among 10 potato cakes.
Place potatoes under the broiler (or in a toaster oven on broil) for 4-5 minutes until golden brown.

I'll be passing on that but am intrigued by the "Strawberry Preserve and Red Cabbage." It sounds like our traditional long-stewed southern cabbage with strawberry preserves added. We're not big on sweet dishes, but I'm going to have to try this.

My husband starts a job this next week. I am going to be making him his lunch to bring in with him. We live in a very hot environment and have no air conditioning, so it gets extremely hot in our house. I just heard that today Obama signed the Tribal Law and Order Act.
