WHATS FOR LUNCH?

So, I'm trying to eat healthier.  My brother (not even 50!!) has had two major heart attacks in the past two months!  He is active, slim, doesn't eat yucky foods...

Today for lunch I made myself a chicken cranberry salad, whole wheat no salt wafers and am drinking a "Naked Superfood" smoothie.

What are you eating today?  (I'm looking for ideas for the future)

I had mint chocolate chip ice cream with walnuts and uncooked oatmeal in it (kind of a staple for me).

Have no recipes, etc., but (and I thought this would be a gross salad dressing when they first marketed it) using WishBone Salad Spritzer on a salad is great. Only 1 calorie a spray. I have only had the Italian but was very very surprised at how good it is. I sometimes just cut off a portion of lettuce and eat it for a snack. (BTW I love junk food so snacking on lettuce is unusual for me!)

That's a subjective term...different in everybody's dictionary. If you're really interested in eating "healthy" and avoiding heart disease, cancer, diabetes and a host of other illnesses associated with diet, there are 2 main categories of food to avoid completely--dairy and meat respectively. Chicken and fish are still meat-flesh that contains toxins, fat and cholesterol. They are neither one "healthy." Here's what I eat to stay healthy and it's been working for the past 12 years.

Beans, whole grains, fruits, vegetables (even starchy ones such as potatoes and squash), nuts, seeds. You can't go wrong when you make these choices.

Avoid meat, dairy, sugar, salt and tons of oil (even olive oil) like the plague. Then you'll really be "healthy." But, it's a tough regimen. I'm the only one out of my siblings who eats this way...the one with the good genes who never gets sick. ;)

I have heard if you put a bit of vinegar on potatoes and pasta, it lowers the glycemic level. If you can't stand vinegar, you could use a bit Italian dressing which has vinegar in it. I used to douse everything with vinegar (before ever hearing the above), but watch your teeth ... the acid is hard on the enamel! Also mixing white and sweet potatoes together makes it healthier. That's what I try to do many times (mix good and bad together). Sort of a compromise. I often put spaghetti sauce on veggies that I don't like.

by a doctor whose opinions I highly respect and he explained how the glycemic index isn't really that big of an issue and it doesn't really affect nutritional quality or even weight gain or loss. It's just another gimmick so I really don't concern myself with that while I know others who swear by it. I just eat a lot of potatoes (sweet and white) sans the butter, cream, etc. Some doctors/nutritionists have made potatoes out to be "unhealthy" for some reason and I just don't buy it. I know some diabetics who won't come within a mile of a potato. They are so frightened of the "sugar" in it but at the same time will pig out on all the meat they can handle because it's sugar-free. Yet, it has been proven that fat is more of an issue in diabetes than sugar. There is sooooo much info out there. Each of us has to do decide for ourselves what we want to believe and what works best for us. It seems like every doctor/scientist/nutritionist has a different take on what we should be eating. It would be nice if they could all be on one page. It would sure make things easier for all of us. :)

I enjoy this book a lot. It's about eating healthier. Created by a fireman who sees so much heart disease. I'm going to put a link to the website where you can watch a video of his speak. Very short, just a couple minutes, but 5 minutes after watching it I ordered the book. It's called The Engine 2 Diet by Rip Esselstyn.

Anyway...I got this recipe from his book.

Corn tortillas
Black beans, drained and rinsed.
Chile pepper
Lettuce, tomatoes, and avacado

I drain and rinse the black beans until it runs clear. Put in a saucepan, add about a third cup of water and some chile pepper (I used about 3 or 4 shakes but you can make it as spicy as you want). Heat up and mash them with a potato masher.

Put a couple corn tortillas on a baking sheet, spread the black beans on them and put some cheese (which is a big no-no in the book, but I don't care...I like cheese). Heat til the cheese is melted and then I top with lettuce, tomatoe, green onion, and chopped avacado. Then sour cream (again sour cream a big no no in the book but I don't care cos I don't use a lot and I like the taste of sour cream. The first time I made this my husband absolutely loved it and said he could eat this every day - and we pretty much do. In fact going to make them in about 5 minutes.

I love this recipe but I use pinto beans and NO cheese, EVER. Dairy products promote the growth of cancer, especially breast and prostate. Dairy is not to die for. It sounds like you are ignoring the premise of the whole concept of the book...eating healthy. Just my take. No offense.

healthy eating - Raw foodie

I'm with you, Lindy. I try to eat raw foods as much as possible and notice a huge difference when I relax or get lazy and go back to old habits.

A really good book for me was "The Raw Food Detox Diet" by Natalia Rose. She has really good, easy to follow steps and recipes and the overall concept is presented really well.

too, at least 2 salads every day but I'm not completely raw. I just don't feel satisfied eating all raw but I think raw foods are important. Too much junk food these days and meat and dairy and then everyone wonders why they are so sick. It's just no surprise to me. I will have to check that book out. I read a lot of books from different doctors and nutritionists. The more you know... ;)

You are absolutely correct. I really should cut out cheese and dairy. Actually I think I saw a recipe for their version of sour cream and I want to try that. Cheese I just need to stop.

No offense taken at all. You are 100% right on. The premise of the book is healthy eating and I need to follow that.

Cheese was the hardest thing for me to give up. I loved cottage cheese so much. Still hate to pass by it when we go to Furr's. It wasn't easy but I've been at this for so long, it's become second nature. I make a "cheese" out of cashews that I use in some casseroles and it passes. ;)

I don't use the season packet. I put in my own seasonings and add fresh ginger, add bits of tofu, spinach, broccoli, peas - whatever is available.

I use two packets of just the noodles, cook and drain them, then add a large can of the La Choy chop suey vegetables and about 5-6 T. of the La Choy teriyaki sauce and mix it all together and heat a bit more. Makes a nice Asian noodle dinner, easily 2-3 servings, or more if a side dish.

Earth Grains 100% whole wheat thin buns, thicker than a tortilla, thinner than a English muffin - they're great. You can make mini pizzas with them (if you haven't given up the cheese), great with humus

I miss pizza. We were so happy when Papa John came out with whole wheat crust. We just ordered our veggie pizza with no cheese. It was great! Now they quit making the whole wheat crust, so no more pizza. I love Italian food and Mexican food and I've learned to make both... just no meat and cheese. Once you know the damage that certain foods can do, they're a whole lot easier to give up... for me anyway. My siblings....not a chance. They'll order a bowl of cheese along with their meat lover's pizza, extra cheese with cheesy crust. All 4 of my siblings have a reserved spot in the parking lot of their doctor's offices. They always tell me, Lindy, don't you want to enjoy life while you're here? I tell them, yes and I do. If you call being home in bed sick or constantly in the doctor's office and/or the hospital "enjoying life" then I don't want to enjoy life the way you do. ;)

Thin Buns - Euro Sepsis

They now have thin bagels. I bought some this weekend and they're wonderful to make breakfast sandwiches and pizzas with. They're a lot more stable for pizza than the buns are, though I have used them also. They're made by Thompson and have "everything", plain and whole wheat and have 110 calories. I love them!

I had tuna salad made with light mayo on whole wheat toast, plus some big slices of tomato.

One time I bought the "light" Miracle Whip, but when I realized how low in calorie the regular Miracle Whip is, I decided it wasn't worth giving up the taste of the regular. I love mayo, but just way too many calories, and I don't like the light mayos.

besides MT I'm a fitness competitor and trainer and know way too much about food! When I'm competing it is all I think about.... anyways, whether it's a high- or low-calorie food, the least processed food is always the better alternative. If high-fructose corn syrup is on the ingredient list, stay far far away! Go for the whole mayo over Miracle Whip... eggs, oil, and vinegar.

Baby spinach leaves, pineapple chunks, feta cheese, raisins, dried cranberries, bacon bits, pralined pecans and topped with a honey dijon dressing.

My husband and I have this at least twice a week and I never get tired of it.

My husband starts a job this next week. I am going to be making him his lunch to bring in with him.  The lunch will be sitting for about 4 hours before his lunch break, so I don't want to make anything that will make a soggy sandwich.
