how do you store vegetables

Posted: Mar 20, 2010

I am fed up with throwing away vegetables that have gone bad too soon after I buy them.  Everytime I throw something away I see my hard earned dollars going into the bin.  I think I may be storing them wrong.  I just leave them in the bags I put them in at the market.  Brocoli and lettuce are usually the first two to go.  How do you store vegetables?  Does anyone have a secret for keeping them fresher longer?  Forget those 2 vegetable bins at the bottom... after 4 days my cucumber and lettuce rotted.  And I also tried those green vegetable bags advertised but I saw no difference and they rotted in the bags as fast as the grocery store bags.  I go to the store about once every other week so trying to make them last as long as I can.  Any help would be much greatly appreciated.

Unfortunately it is really hard to store fresh veggies from the grocery store for more than a couple days, because by the time you buy them they have already been out of the ground for weeks. If you can't go out more than once a week I would suggest buying better veggies, from someplace like Trader Joes or a roadside stand or something, then at least the veggies will be in better shape before they get to your house. I have had lettuce from Trader Joes stay fresh for weeks, just in the fridge in bags like you said. The other thing is to try to buy more frozen veggies and use up your fresh the first few days. I don't think you are going to find a good way to store fresh veggies for 2 weeks from the grocery store.

Thanks - this really helps - just me

First....oh how I miss Trader Joes. I loved, loved, loved that store. They had great snacks, and these Japanese ice creams balls that were so creamy and good. I wish we had one here.

Anyway...we do have a farmers market store here I will start going to. I was trying to do everything in one stop, but, I'm sick of them going bad too quickly. Frozen veggies are a good idea, but I bought some frozen brocoli and brussel sprouts and they had no flavor to them. But...last week I cooked frozen spinach with some cloves of garlic and it was so good.

Thanks for the advice and to know that veggies don't last very long. I thought maybe I was doing something wrong.

Do you have a salad spinner for the lettuce? - lka

I actually just bought one myself recently. I always buy romaine, not iceberg, cuz more nutrition in romaine. When I get home from the store I immediately wash the lettuce under cold water and cut it up to fit in the spinner... it squeezes all the excess water out. I leave it in the spinner and it is good for a week. Bought one at K-Mart for about $15. I am trying to eat more fresh veggies myself and I have to just "force" myself to get in the habit of washing everything when I get home, so less work when I want to make a salad or something. If I put a tomato in the salad and don't use it all, I store in a small plastic container and just slice it when I need it. In the end, you do have to eat it within 5-7 days. Try not to over-buy too many things unless you are going to consume it fast.

I was wondering about them. Think I'll get one - just me

I'm glad I came back to the board before heading out. I too buy Romaine. I like the crispiness of it and it seems to last longer than iceberg, and tastes better. Didn't know it was more nutritious. That's good to know.

I have seen the salad spinners, but don't know of anyone who had one and have always wondered how they work. I will definitely get one. Talking with DH, we are only going to buy enough veggies for meals for the first 4 days of the week, then eat frozen or something else the rest of the week, and every Saturday will go over to the fruit/veggie stand in town to get the veggies.

Every time I go to the store and the veggies all look good so I do over buy and am going to just stick to our meal plan and buy no more (and eat before I go to the store so I will not want to buy everything in sight). LOL

Thank you so much about the salad spinner. I am going to get one and look for some plastic containers to store my other veggies and wash them all once I get home.

Your post has helped me a great deal.

very dry, then wrap the freshly washed and dried leaves in a couple of paper towels, wrapped around the head of lettuce whole, and place it into a dry bag, not the wettish one it came out of. That helps lettuce stay fresh longer. I don't use a spinner but this works almost as well.

If you wash all the veggies and fruits immediately, - veggies

and then put them into the fridge, they will rot sooner.
You should put them in the fridge, as is, and wash only what you need.

Except if you really, really pat them dry after washing and then put them inti the fridge.

But tell everybody in the household that the veggies and fruits are NOT washed yet to make them last longer.

The problem is the frequency of your shopping more than your storage methods. - SM

Fresh fruits and veggies are meant to be just that ... fresh. Once every two weeks is simply not going to do it. At best, you'll end up eating food that may still look fresh but has lost much of its nutritional value.

Consider buying more frozen foods. At least they won't be going to waste and you'll be able to retain more nutrition.

Im single and only shop twice a month, so I buy a - fresh veggie for 1 night, & the rest frozen. nm
