different recipes for candy to make for Christmas. Anyone have "simple" recipes?

Peanut butter balls:
One stick of butter or margarine (I use margarine)
One-half cup smooth peanut butter.
One teaspoon of vanilla.
One pound of powdered sugar.
Chocolate chips (optional).

Cream butter and peanut butter together - it helps if the butter is already soft but not melted - and vanilla. Add powdered sugar. You'll be surprised how much it takes. I just dive in with both hands and knead it till it's handleable. I usually start with about 3/4 of a pound, then add the rest till it's of a texture you can roll without its being sticky. Then roll the balls and put them on wax paper. They're great just plain, but if you want to really impress, melt chocolate chips and coat the balls with the melted chocolate.

Mints:
Two egg whites.
One pound powdered sugar.
One teaspoon vanilla.
Flavor extracts and food coloring.

Using an electric mixer whip the egg whites up to stiff peaks, then fold in powdered sugar. One about half the sugar is in, add the vanilla.

You can make them all one flavor, or several. I usually make about half of them peppermint, and smaller bunches of lemon, orange,rum, and sometimes maple. For each flavor, put some of the base in to a separate little bowl, add the flavoring and whatever color you choose, then add enough powdered sugar to make them able to roll without being sticky. Roll them in balls about 1" across and put them on wax paper. Take a fork and flatten the ball with one push of the fork tines so that it's got stripes across.

For added flavor/color, melt chocolate chips and top with melted chocolate. The peppermint ones are especially effective this way. I usually do peppermint pink, lemon yellow, orange orange, rum tan, and maple brown.

It's soooo easy in a pain in the ass way but everyone loves them. If my deal isn't clear here the recipe is on the Philly cream cheese site.

Pack of oreos
8 oz pack of cream cheese
White and brown chocolate

Bash up the oreos into crumbs...really get your frustrations out if you don't have a food processor. If you do have a food processor just, you know, grind them up into crumbs.

Mix it with the softened cream cheese. Use your hands and make sure you can't see any white.

Roll it into bite-sized balls.

Melt the chocolates in two separate bowls.

Dip the balls to coat. I use a slotted spoon or a toothpick. Set them on wax paper to dry.

Then for a cute garnish, remelt the leftover chocolates and drizzle the white over the brown balls and the brown over the white balls.

I suck at giving directions but the candies speak for themselves. They're called oreo balls or oreo truffels.

This year I did a bunch of crazy colored ones with candy melts I got at Tops. Awesomeness!

Then there's always divinity, which you can google and find tons of recipes. And don't forget chocolate covered pretzels!!!! yum!!! Let me know how you do, and let me know if you want my fudge recipe. It's a recipe that seems to come out different every time I make it, but it's always good!!

Here it is. For some reason it comes out different everytime, but tastes good everytime. So, so easy.

1 lb. powdered sugar (1 lb. = 3 1/2 c. sifted)
1/2 c. cocoa
1/4 c. milk (4 tbsp.)
1/4 c. butter
1 tsp. vanilla
1/2 c. chopped nuts

Lightly grease an 8-inch square dish or line with wax paper. Set aside. Place powdered sugar and cocoa in a medium-sized, heat-resistant mixing bowl. Stir to mix. Add milk and butter to sugar and cocoa mix. DO NOT STIR.
Heat uncovered on HIGH for 2 minutes. After heating, stir just to combine ingredients. Add vanilla and nuts. Stir until blended. Pour into prepared dish; refrigerate for at least 1 hour. Cut and serve. Better to line the pan with parchment paper for easier removal - can just lift both sides of paper without the paper ripping. Let me know how it comes out!!!!

Both super simple...

Peppermint Bark
30 peppermint candies (the round red/white ones)
1 normal-sized bag of white choc chips or dark choc (your preference)
1/8 tsp of mint extract

Crush the candies (I use my food processor). Melt the choc chips however you want. Stir in the crushed candy and extract. Line the biggest baking pan you have w/ parchment paper or foil (prefer pan larger than 13 x 9). Pour your mixture onto pan and set in the fridge. When solid, hand smash into bite-sized pieces. Store in fridge.

Also have a peanut butter pie recipe that is super simple. My family and neighbors request it every year, too.

Good luck, and to the fudge maker, can't wait to see the recipe. Fudge is one of my all-time faves along w/ p'butter balls. Hey, my doc keeps telling me I MUST gain weight, so what's a gal gonna do? :D

English toffee. - So easy.

1 pound of butter
1 pound of brown sugar
1 tsp vanilla
Chocolate chips
Nuts (optional)

Cook butter, brown sugar and vanilla over medium-high heat to hard ball stage, if you have a candy thermometer. I do not, so I drizzle a little of it periodically into a glass of ice water and when it hardens to a crunchy texture, it is done. It takes about 10-15 minutes. Pour onto cookie sheet (I usually spray with baking spray, but I am not sure if that is necessary) over whatever nuts you decided to use if you use any. I like almonds. Sprinkle chocolate chips over the top of hot candy and wait a few minutes. Once they melt, spread the chocolate into an even layer over the toffee. When cool, break into pieces and it is all done. My favorite easy go-to holiday candy recipe.

Does anyone make popcorn balls? - That was always my favorite at Christmas. NM

chocolate butterscotch fudge - sereneone

Equal size bags of chocolate and butterscotch chips
1 can sweetened condensed milk
1 to 1-1/2 cups walnuts (depends how nutty you want it)
1 tsp vanilla
pinch of salt

Place both bags chips in top of double boiler over gently simmering water, add pinch of salt and entire can of SC milk. Stir and let melt, stirring occasionally. Make sure water doesn't get too high, should stay at gentle simmer or it will cook and harden on the bottom or if you don't stir often enough. Once all chips are melted, take off heat, stir in vanilla, stir in walnuts. Pour into buttered, foil-lined pan. Refrigerate until firm. It won't be real hard, will still be a little gooey.

About as simple as you can get. I've been making for 35+ years. Very rich fudge.
