I'm pretty sure most of us are in the same boat with making our money last longer. One thing I've found is replacing hamburger with lentils in certain recipes.
Hamburger Helper, for instance. I know, not the healthiest thing in the world, but if you can find them on sale for $1 it's a real deal. It works great with the Mexican type mixes. You can also take out a step by cooking the lentils along with the rice and sauce, since they don't need to be soaked. Just add the extra water that you'd use to cook the lentils separately. It's just like rice, 2:1.
