Easter brunch

Happy Easter/Passover weekend. Any ideas for brunch. Am going to try the blueberry cake listed below, ham, home fries, fruit, cornbread, brownies and assorted juices. Have 5 food fussy youngsters coming and some dietary restricted adults.I keep thinking I don't have enough but hate wasting food with too many leftovers.;

If you type in the google search "white chocolate eggs and bacon" you will see a cute little treat for any kids, and because it is a brunch, its totally fun!
Easy to make also.
Try to donate leftovers if possible... - SP

If your town/area has a food bank, try contacting them about donating your leftovers. Maybe even nursing homes or hospitals. My MIL donated lots of my leftover wedding sheet cakes to their church mission and the women's shelter, it was greatly appreciated and not wasted. Just an idea if possible. You could also send leftovers home with your guests or freeze them or have a potluck next weekend with friends too. I've also cut my recipes in half (if applicable) to avoid too much food as some foods cannot be frozen/reheated or just turn out bad after day 2, 3, etc. Good luck and Happy Easter! :-)

Oh yes, I donate and wrap and send home, I just hope they use it. Thanks. I will have to look up "fritata" as don't know what that is but will investigate. Happy Easter!
GoGurts are always a hit with kids - High Protein

Just buy a box (there are 12 in it) for about $2.50, fill a bowl with ice and water, spread out the GoGurts and let the kiddies grab at will! Keep a kid-safe pair of scissors nearby to make opening easier. If you won't use them afterwards, send them home for car treats. The pastel colors work great with Easter colors!
my kids used to love to freeze these and make a frozen yogurt pop. - kids love to eat what they think is a dessert

If you want to do an egg dish, you can use a muffin tin - cindy

and mix some eggs and mild in a bowl like you would for scrambled eggs and put some sausage/bacon and cheese (or whatever ingredents you want) in each individual muffin spot and then poor in the eggs and bake to make little individual omelets or even put a little crust in each one and make individual quiche. Kids love little finger food and this is a nice neat way to make eggs for everyone. Enjoy your brunch!
Just came across recipe so I thought I would add:
8 oz breakfast sausage (csing removed and crumbled into small pieces)
1 tsp extra-virgin olive oil
8 oz sliced muschrooms
1/4 cup sliced scallions
1/4 cup shreddd swiss cheese (or what every you like)
1 tsp fresh ground pepper
5 eggs
3 egg whites (this is healthy version could just use 8 eggs)
1 cup 1% mild
Coat nonstick muffin tin generously with cooking spray. Heat large skillet over medium high heet and add sausage until cooked then transfer to bowl to cool. Add oil to pain and cook mushrooms until golden and then move to bowl with sausage let cool for 5 minu5tes then add scallions, cheese and pepper
Wisk eggs, egg whites, and mild in medium bowl. Divide the egg mixture evenly among the prepared muffin cups and sprinkle a heaping tablespoon of the sausage mixutre in each cup.
Bake until the tops are just beginning to brong, 25 minutes. Let cool on a wire rack for five minutes, flip out onto rack and turn back upright and place on serving plate, let cool complete.
