Cooked cabbage is great. Just cut it into quarters (or two halves or smaller pieces, depending on how many you intend to feed. Place it into a pot with a lid, adding enough water to provide steam. Don't want the cabbage to burn either. Add some butter. Bring it to a boil, then turn it down and just let it simmer. After about 15 minutes, it should be tender and ready to eat. Just stick a fork in it to test for tenderness. When ready to eat, salt and pepper to taste. It's one of the best things to eat and good for you. It is especially wonderful to eat when fresh. I received this recipe from a friend. I made it and thought it needed a little more tomato, so the second time I made it, I added a can of Progresso Hearty Tomato Soup and it was even better. I will give you the original recipe and you can decide how you like it.
Cabbage Casserole
2 tsp Canola oil
1 onion (finely chopped)
1 green pepper (chopped)
2 garlic cloves (minced)
1 lb. ground sirloin
1 (14 oz) can diced tomato
1 (8 oz) can tomato sauce
1/2 cup cooked rice
1/2 small head cabbage shredded
Heat oven to 350 degrees and grease 9 x 13 pan
Make filling: Heat oil over medium heat and add onion, pepper and garlic. Add Beef and cook through. Drain grease. Stir in diced tomato, tomato sauce, and cooked rice (also progresso soup if you want to try it that way), and bring to a boil.
Spoon 1/2 of the filling into bottom of greased baking dish. Top with all of the cabbage, then top with other 1/2 of the filling. Cover with foil and bake about 1-1/4 hours.
Super yummy.

with just the Progresso soup and w/o the tomato sauce? Or would it get too watery? I really like tomatos, but I'm not crazy about the way tomato sauce tastes. Maybe a bigger can of tomatos. I'm going to give this a try this weekend. Looks really healthy. I love cooked cabbage, but always manage to overcook it.

I used a handful of minute rice as I didn't have cooked rice. Instead of the can of soup I used a 14 oz. can of tomato sauce. Thanks so much for posting this recipe. It's a keeper :)

Cut cabbage into approximately 8 wedges and core. Wrap 1 slice of bacon around each wedge (turkey bacon works too). Season with salt and pepper. Wrap in foil. Cook on grill approximately 20-30 minutes turning frequently.
