Anyone have a receipt for creamed spinach?

I went to dinner with my mom to a local casino and they had the BEST creamed spinach I've ever had, bar none!  She was just diagnosed with moderate Alzheimer's two weeks ago and isn't up to traveling 5 hours to the rest of the family, so I am going to make dinner for her at her house with whatever family is up here (Vegas) at the time Wink.  I bought a prime rib roast a month or two ago on a killer sale for a special occasion and I can't think of a more special one that this Laughing  Anyway, sorry about the ramble.  I was thinking a perfect accompaniment to the roast would be creamed spinach.  Anyone?

Me again. Just to let you know I didn't forget about the recipe. As you probably know, chefs are pretty busy, so if you still need/want a recipe, I'll try to get it to you later this evening! :)

Oh and yes, we prefer fresh spinach but frozen works too, as long as you get as much liquid out as possible. I will also remind him to go easy on you, he he!

How I make it - anon

Creamed spinach is one of my favorite things in the world. I nuke frozen chopped spinach in the microwave right in the box, let it cool and squeeze out all the water. Put it in a pan, add heavy cream, salt, pepper, a little nutmeg, a small shot of Worchestershire and a hunk of butter. Maybe some garlic powder if you want.

This is also good as a sauce for pasta if you make it wet enough.

I pulled this from allrecipes.com and made it for New Year's Eve last year. I'm not a big spinach fan, but it turned out great!

3 (10 ounce) bags clean fresh spinach, roughly chopped
1 1/4 cups heavy cream
1/4 cup butter
2 tablespoons minced garlic
3 tablespoons minced white onion
6 slices shredded provolone cheese
1/2 cup freshly grated Parmesan cheese
salt and pepper to taste

Directions

1. Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
2. Melt the butter in the skillet over medium heat. Add garlic and onions; cook and stir until tender, about 5 minutes. Add the spinach and stir in the heavy cream. Sprinkle in the provolone cheese and stir to melt and coat the spinach. Once the provolone has melted, stir in the Parmesan cheese and continue to cook and stir until thickened. Season with salt and pepper and serve hot.

Tonight I am going to try making spinach stuffed chicken breast and would like to know if this sounds right or what you would do to add or change it.  Kind of making it up as I go and here and there from recipes.  Thinking about mixing spinach, ricotta cheese, garlic, basil, salt and pepper (don't know if other seasoning would be good).  Then pound the chicken breast flat and fill and roll.  I want to bake them and thought maybe a cream of mushroom type sauce over them ...
