in much the same way the animal sold would be used in the ritual animal sacrifice. The analogies are the following: Baker is to gay couple as pet store owner is to Santerian. Cake is to gay marriage ceremony as puppy or rabbit is to animal sacrifice.

Telling someone why you don't want to participate in or contribute to something is not using something against people with whom you disagree. Actually, it's respectful because you are telling someone the truth. I'd rather someone tell me the truth than lie to me. When someone tells me they disagree with me, I'm not offended or insulted and don't feel the person is using it against me. It's simply the way they feel or what they believe, and they're entitled to those feelings/beliefs.
